Sauce ingredients.
Trim Pork of all fat and sinew
Pound Pork into eight thin cutlets
Saute mushrooms, onion on medium high heat. Do not crowd or they will steam rather than brown. Add garlic and herbs about a minute before done.
Browned mushrooms
Add Demi Glace and reduce by half.
Saute Pork with Ghee/Olive Oil about 45 seconds per side on medium high heat until lightly browned. Hold in warm oven until all cutlets are cooked.
Add Pork to sauce to heat and mount sauce with cold butter before service. Sprinkle Parsley on top.
