This was a super moist pork roast, and the addition of the creamy rice with Uncle Ben’s Whole Grain White Rice was awesome! If you are stumped for what to do with Uncle Ben’s I just checked out their website and there’s some great recipes and coupons…
Pork Roast and Creamy Rice
INGREDIENTS:
- 2 tablespoons butter
- 2 large onions, thinly sliced
- 3 teaspoons minced garlic
- 1/4 cup fire roasted red peppers-chopped
- 1/2 cup beef broth
- 1/3 cup heavy whipping cream
- 2 tablespoons coarse-grained mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 1/2 pounds pork tenderloins (I used 2 small ones)
DIRECTIONS:
Preheat oven to 400 degrees. Spray a 9 x 13 baking dish with cooking spray. In a large skillet, melt the butter over medium heat. Add onions and garlic; cook for about 5 minutes, or until onion is tender. Add in the red peppers. Remove from the heat and stir in the broth, cream, mustard, salt and pepper.
Place pork tenderloins in prepared baking dish. Pour onion mixture over tenderloins. Bake for 30 minutes or until a meat thermometer registers 155 degrees. Let stand for 10 minutes before slicing.
Meanwhile: Using Uncle Ben’s Whole Grain White Rice, make up this super easy creamy rice:
Make the rice according to that package, but cutting the water by 1/3 cup. During STEP 2 of the directions, add in 3/4 cup peas, 1/2 teaspoon black pepper, 1/2 cup whipping cream. Stir and let finish steaming for 5 minutes, to warm the cream and heat the peas through. Serve with the pork roast.
The challenge was to create a kid-friendly meal featuring Uncle Ben’s Whole Grain White Rice. So this is what I came up with. Foodbuzz and Uncle Ben’s were kind enough to send me a box in exchange for my blog post, all opinions and the recipe are my own
