%20who%20owns%205280%20Land%20and%20Cattle%20Company%20%20with%20both%20the%205280%20Beef%20and%205280%20Pork%20labels%20(fyi,%20Denver%20is%20at%205280%E2%80%B2%20altitude;%20I%E2%80%99m%20betting%20that%20has%20something%20to%20do%20with%20that%20name!).%20A%20few%20months%20ago%20Ty%20was%20generous%20enough%20to%20provide%20me%20with%20some%20fantastic%20beef%20(see%20how%20my%20friend%20Karen%20used%20some%20of%20that%20beef%20to%20develop%20a%20guest%20post%20for%20me)%20and%20he%20once%20again%20made%20a%20call%20I%20could%20not%20refuse.%20%E2%80%98Hey%20Barb,%20would%20you%20like%20to%20try%20some%20of%20our%20pork?%E2%80%99%20Now%20who%20would%20say%20no%20to%20that?%20BACON?%20Oh%20yeah.%20Raised%20ethically%20and%20organically%20in%20the%20same%20manner%20as%20the%20beef,%20Ty%E2%80%99s%20pigs%20are%20a%20Hampshire/Yorkshire%20blend%20that%20are%20raised%20without%20added%20growth%20hormones,%20antibiotics%20or%20steroids.%20Living%20life%20free%20on%20the%20range%20they%20are%20allowed%20to%20forage%20on%20native%20plants%20and%20grasses%20as%20part%20of%20their%20vegetarian%20diet.%20I%20knew%20this%20would%20be%20good%20and%20besides%20I%20wanted%20to%20see%20my%20pal%20again.%3C/p%3E%3Cp%3ETy%20asked%20me%20to%20meet%20him%20at%20a%20new%20store%20that%20had%20opened%20near%20me;%20a%20hunting%20and%20sports%20outfitting%20place%20called%20Cabela%E2%80%99s%20in%20Lonetree,%20CO.%20What%20he%20did%20not%20mention%20was%201.%20It%20is%20a%20mega%20store%20that%20is%20so%20huge%20it%20even%20had%20the%20street%20named%20after%20it%20and%202.%20He%20would%20be%20in%20the%20parking%20lot.%20After%20a%20bit%20of%20time%20hunting%20for%20him%20IN%20the%20store%20he%20came%20and%20found%20me%20and%20directed%20me%20in%20the%20right%20direction;%20I%20should%20have%20known%20a%20horse%20trailer%20would%20be%20involved.%20Ty%20and%20his%20family%20had%20traveled%20here%20from%20Meeker,%20CO%20with%20a%20horse%20trailer%20filled%20with%20orders%20to%20deliver.%20FIVE%20THOUSAND%20pounds%20of%20meat.%20This%20time%20around%20I%20got%20to%20meet%20his%20boys%20and%20his%20beautiful%20wife%20Rachael.%20Rachael%20and%20I%20just%20bonded%20instantly;%20I%20mean%20she%20is%20now%20calling%20me%20mom%20and%20I%E2%80%99m%20OK%20with%20that!%20Beautiful,%20wonderful%20and%20sweet%20family,%20I%20just%20adore%20them%20all;%20the%20meat%20is%20a%20bonus%20(it%20is%20gorgeous%20isn%E2%80%99t%20it?).%3C/p%3E%3Cp%3EThanks%20too,%20once%20again,%20to%20my%20pal%20Karen%20at%20Savoury%20Table.%20This%20business%20of%20cooking%20in%20one%20place%20and%20taking%20photos%20at%20another%20finally%20caught%20up%20to%20me;%20I%20can%20not%20find%20one%20of%20my%20camera%20cards;%20you%20know,%20the%20one%20with%20the%20beautifully%20styled%20meat%E2%80%A6but%20no%20fear,%20I%20remembered%20Karen%20had%20captured%20a%20gorgeous%20shot%20of%20our%20present%20for%20her%20post%20about%20her%20Mom%E2%80%99s%20Wilted%20Salad%20and%20she%20was%20gracious%20enough%20to%20let%20me%20use%20her%20photo;%20thanks%20Karen!%20The%20sausage%20and%20bacon%20will%20be%20saved%20for%20another%20day;%20this%20day%20I%20was%20all%20over%20that%20pork.%3C/p%3E%3Cp%3EI%20had%20originally%20planned%20to%20grill%20but%20it%20was%20a%20bit%20cool%20outside%20so%20I%20wanted%20something%20that%20could%20be%20cooked%20inside%20and%20I%20rediscovered%20this%20dish%20on%20my%20own%20blog%20and%20that%20was%20that.%20Also%20fortuitous%20that%20I%20had%20everything%20on%20hand%E2%80%A6yay!%20Well,%20everything%20except%20bread%20crumbs%20but%20my%20head%20has%20an%20auto%20rewrite%20rule.%20If%20I%20read%20breadcrumbs%20I%20now%20think%20Panko;%20I%20love%20the%20larger%20texture%20and%20the%20resulting%20crispness%20of%20dishes%20made%20with%20Panko.%20If%20you%20haven%E2%80%99t%20tried%20it%20get%20some%E2%80%A6you%E2%80%99ll%20see.%20I%20must%20worry%20that%20the%20world%20Panko%20supply%20is%20on%20the%20verge%20of%20running%20out%20because%20I%E2%80%99ve%20now%20got%20four%20boxes;%20each%20bought%20as%20a%20backup%20for%20the%20others.%20Truly%20enough%20is%20enough!%20Only%20precaution%20I%20can%20mention?%20This%20sauce%20is%20so%20good,%20try%20to%20keep%20from%20eating%20it%20by%20the%20spoonful%20before%20serving!%3C/p%3E%3Cp%3EI%20always%20do%20a%20bit%20of%20a%20double%20take%20at%20the%20ingredients%20too;%20I%E2%80%99ve%20never%20seen%20anything%20else%20I%E2%80%99ve%20ever%20cooked%20that%20%20calls%20for%20both%20white%20wine%20and%20bourbon.%20But%20you%20know%20what?%20It%20works%E2%80%A6the%20sauce%20is%20simply%20divine.%20I%20served%20this%20with%20the%20Crispy%20Shallots%20Fried%20Rice%20I%20posted%20last%20week;%20it%20made%20for%20a%20most%20delicious%20meal!%3C/p%3E%3Cp%3EPork%20Chops%20with%20Mushroom%20and%20Bourbon%20Cream%20Sauce%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EPreparation%3C/p%3E%3Cp%3EPrepare%20the%20sauce.%20Saut%C3%A9%20onions,%20garlic,%20and%20mushrooms%20in%202%20Tbsp%20of%20olive%20oil%20in%20a%20large%20skillet%20on%20medium%20high%20heat%20until%20the%20mushrooms%20are%20browned%20-%20about%2010-15%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20wine,%20increase%20the%20heat%20to%20high,%20and%20boil%20down%20until%20the%20liquid%20is%20reduced%20to%20almost%20a%20glaze,%20about%204%20minutes.%20Add%20the%20chicken%20stock,%20and%20bourbon,%20boil%20until%20reduced%20by%20two%20thirds.%3C/p%3E%3Cp%3EAdd%20the%20cream%20and%20simmer%20several%20minutes%20until%20the%20sauce%20thickens.%3C/p%3E%3Cp%3EPrepare%20the%20pork.%20Whisk%20an%20egg%20and%202%20Tbsp%20of%20water%20in%20a%20shallow%20baking%20dish.%20Sprinkle%20both%20sides%20of%20pork%20chops%20with%20salt%20and%20pepper.%20Dip%20chops%20into%20the%20flour,%20then%20egg%20mixture,%20then%20breadcrumbs,%20coating%20completely.%3C/p%3E%3Cp%3EHeat%20olive%20or%20grapeseed%20oil%20in%20a%20large%20skillet%20over%20medium-high%20heat.%20Add%20the%20pork%20chops%20and%20cook%20until%20brown,%20about%204%20minutes%20per%20side.%20Turn%20the%20chops%20one%20more%20time,%20lower%20the%20heat%20to%20low,%20cover,%20and%20cook%20an%20additional%205%20minutes.%20Alternatively%20you%20can%20put%20the%20chops%20in%20a%20pre-heated%20oven%20at%20400%C2%B0F%20for%205-8%20more%20minutes.%3C/p%3E%3Cp%3EWhen%20about%20to%20serve%20the%20pork,%20bring%20the%20sauce%20to%20a%20simmer%20and%20add%20the%20chopped%20basil%20to%20it.%20Season%20to%20taste%20with%20salt%20and%20freshly%20ground%20black%20pepper.%3C/p%3E%3Cp%3ENotes%3C/p%3E%3Cp%3EI%20don't%20overcook%20my%20pork;%20the%20old%20tradition%20of%20cooking%20it%20until%20it's%20ruined%20is%20not%20necessary%20and%20if%20cooked%20enough%20to%20be%20done%20but%20not%20enough%20to%20be%20ruined...that's%20a%20better%20call!%3C/p%3E%3Cp%3EStandard%20recommendations%20for%20pork%20are%20to%20cook%20it%20to%20an%20internal%20temp%20of%20145%C2%B0F,%20the%20USDA%20recommends%20160%C2%B0F.%20Take%20it%20off%20the%20heat%20at%20140%C2%B0%20and%20it%20will%20continue%20to%20cook%20for%20a%20few%20minutes%20and%20be%20safe,%20tender%20and%20moist.%20Pork%20cooked%20to%20160%C2%B0%20is%20ruined!%3C/p%3E%3Cp%3E2.2%3C/p%3E%3Cp%3Ehttp://www.creative-culinary.com/porkchops-with-mushroom-bourbon-cream-sauce-recipe/%3C/p%3E%3Cp%3EThis%20recipe%20brought%20to%20you%20by%20Creative%20Culinary%20%7C%20A%20Food%20and%20Cocktail%20Blog%20%7C%20Website:%20www.creative-culinary.com%3C/p%3E){kind=link}
