- Heat butter in heavy pan and cook the pork chops quickly over moderate heat till golden remove and place in casserole.
- Add in onion celery and carrot to pan and fry till tender sprinkle in flour and cook stirring constantly for 1 minute. Gradually stir in the ginger beer and stock and bring to boil stirring constantly. When sauce has thickened stir in Worcestershire sauce lemon juice tomatoes and seasoning to taste. Pour sauce over chops cover casserole and cook in moderate oven (350F or possibly mark 4) for 45 min or possibly till pork is tender.
