- In fat side of pork, cut 6 deep slits. Put 1 piece of garlic, a piece of pickle and 1/6 of the bay leaf. Salt and pepper the top of roast.
- Preheat oven to 450 degrees. Sear meat for 20 min. Pour ice water over meat. Reduce oven to 325 degrees. Roast 1 hour. Pour creme de cassis over roast. Cook to desired doneness.
