Pizzelle, Anise Flavor

The word Pizzelle is an Italian word which loosely means small, flat and round. They are wafer-type cookies which originated in the region of Abruzzi, Italy and known to exist as far back as the 8th Century. Pizzelles were originally baked on double-sided irons embossed with the family crest. The irons usually had long handles attached and the pizzelles were cooked over an open flame, for special holidays such as Christmas and Easter.
Today, pizzelle irons are popular among many nationalities. A variety of flavorings can be used in the dough, In our family, we make them often and the primary flavor is anise. My wife, Eleanor makes them, and the recipe makes about 7 dozen.
Pizzelles are great for snacks and to serve when company arrives. They are great dipped in wine, hot chocolate and coffee.Try them and you will be a believer.

Ингредиенты

  • 12 eggs ( room temperature)
  • 2 cups sugar
  • 2 cups oil
  • 2 tsp. pure lemon or orange flavoring. ( or 3 T. frozen orange juice concentrate)
  • 1 tsp. pure anise oil ( can be bought at a drug store)
  • 2 oz. anise extract
  • 4 cups flour

  1. Using mixer:
  2. Beat eggs well.
  3. Add sugar gradually, mix well.
  4. Add oil, flavors: blend until smooth.
  5. Add flour, little at a time, blend well.
  6. Cover and chill dough over night.
  7. Heat pizzelle iron following manufacturer's direction.
  8. Drop 1 tablespoon batter onto each design of heated pizzelle iron: close lid.
  9. Bake for about 1 minute or golden brown.
  10. Carefully remove pizzelle from iron.
  11. Let cool on counter top.
  12. Repeat with remaining batter
