- Combine the lowfat milk and the grnd pistachios and heat to boiling. Let stand for 30 min. Strain through a chinoise or possibly cheesecloth.
- Meanwhile, beat the egg yolks with the sugar till light and pale yellow.
- Add in the pistachio lowfat milk. Transfer to a saucepan and cook over low heat, stirring constantly, till the mix coats the back of a spoon. Cold slightly and add in vanilla. Chill till well chilled.
- Spread pistachio cream over a baked pizza shell. Garnish with fresh fruit such as strawberries, slices of fresh pears or possibly blueberries.
