%20which%20are%20now%20my%20passion.%20One%20of%20the%20things%20I%20loved%20were%20these%20small%20jars%20of%20fantastic%20jelly%20made%20from%20Pinot%20Noir,%20Cabernet%20Sauvignon,%20Chardonnay%20or%20Ros%C3%A9%20wines.%3C/p%3E%3Cp%3EWhile%20I%20used%20to%20have%20a%20ready%20supply,%20I%20haven%E2%80%99t%20had%20any%20in%20a%20couple%20of%20years%20and%20I%20was%20inspired%20to%20try%20making%20my%20own%20for%20this%20month%E2%80%99s%20Progressive%20Eats%20group%20event.%20Jenni%20Field%20with%20the%20blog%20Pastry%20Chef%20Online%20is%20the%20host%20for%20this%20month%E2%80%99s%20event%20and%20has%20chosen%20the%20theme%20of%20Wine%20and/or%20Cheese.%20This%20is%20amazingly%20simple%20to%20do%20and%20while%20I%E2%80%99ve%20made%20Pinot%20Noir%20Red%20Wine%20Jelly%20this%20time%20around,%20use%20the%20same%20recipe%20for%20your%20favorite%20wine%20whether%20it%20be%20red%20or%20white;%20this%20one%20was%20fantastic%20so%20I%E2%80%99m%20looking%20forward%20to%20trying%20other%20variations%20too.%3C/p%3E%3Cp%3EIt%20could%20not%20be%20simpler%20even%20if%20you%20are%20not%20someone%20who%20does%20canning%20on%20a%20regular%20basis.%20It%20only%20made%20a%20little%20more%20than%204%20jars%20so%20if%20you%20don%E2%80%99t%20want%20to%20put%20them%20in%20a%20hot%20water%20bath,%20just%20give%20the%20extra%20jars%20to%20friends%20and%20don%E2%80%99t%20bother%20with%20that%20step.%20The%20only%20thing%20I%E2%80%99ve%20done%20differently%20this%20time%20around%20was%20to%20follow%20a%20tip%20I%20saw%20on%20an%20episode%20of%20America%E2%80%99s%20Test%20Kitchen.%20A%20bit%20more%20than%20a%20cup%20of%20the%20wine%20is%20reduced%20considerably%20and%20then%20added%20back%20in%20at%20the%20end;%20that%20really%20does%20help%20to%20intensify%20the%20flavor.%3C/p%3E%3Cp%3EBefore%20a%20client%20sent%20me%20a%20tall,%20large%20stockpot%20I%20just%20used%20my%20largest%20regular%20stockpot%20for%20the%20hot%20water%20bath.%20I%20found%20canning%20racks%20that%20fit%20in%20the%20bottom%20of%20my%20stockpot%20and%20it%20makes%20the%20perfect%20vessel%20for%20the%20amount%20that%20I%20do.%20These%20are%20actually%20cooling%20racks%20for%20cakes%20but%20I%20bought%20them%20for%20canning%20and%20was%20happy%20to%20have%20something%20with%20a%20multiple%20use!%20Some%20jars%20and%20a%20jar%20lifter%20and%20I%20was%20set%20without%20having%20to%20spend%20a%20ton%20of%20money%20on%20a%20large%20canning%20pot%20that%20I%20had%20no%20room%20to%20store.%3C/p%3E%3Cp%3EThis%20jelly%20is%20not%20something%20I%20would%20normally%20just%20spread%20on%20toast;%20I%20prefer%20it%20served%20with%20fluffy%20homemade%20biscuits%20or%20even%20better%20as%20part%20of%20an%20appetizer%20as%20shown%20in%20this%20post.%20The%20combination%20of%20crisp%20cracker,%20Mascarpone%20Cheese%20and%20this%20Pinot%20Wine%20Jelly%20was%20addictive.%20Seriously%20I%20considered%20sitting%20down%20at%20the%20kitchen%20table%20with%20a%20jar%20of%20jelly,%20the%20cheese%20and%20crackers%20and%20a%20glass%20of%20water%20for%20lunch.%20Nothing%20else.%20I%20stopped%20myself%20but%20really%E2%80%A6I%20could%20have!%3C/p%3E%3Cp%3EWant%20to%20surprise%20someone%20with%20a%20great%20homemade%20gift?%20This%20would%20do%20quite%20nicely.%20Mother%E2%80%99s%20Day%20is%20coming%20up%20and%20I%20can%20promise%20you%20this%E2%80%A6mom%E2%80%99s%20LOVE%20something%20from%20the%20heart.%20They%20really%20don%E2%80%99t%20need%20perfume%20or%20lotions%20or%20another%20scarf.%20You%20show%20up%20with%20a%20gift%20basket%20with%20some%20cheese,%20crackers,%20a%20bottle%20of%20nice%20wine%20and%20this%20jelly%20and%20if%20you%20think%20they%20love%20you%20now?%20Watch%20out%E2%80%A6you%20will%20totally%20slay%20your%20mom;%20I%20promise.%3C/p%3E%3Cp%3EMake%20sure%20you%20check%20out%20my%20friends%20contributions%20to%20Progressive%20Eats%20this%20month%20after%20the%20recipe.%20Such%20a%20talented%20group%20of%20people;%20each%20and%20every%20single%20month%20I%20wish%20we%20were%20neighbors%20and%20could%20actually%20share%20the%20bounty%20from%20our%20efforts.%3C/p%3E%3Cp%3ERed%20Wine%20Jelly%3C/p%3E%3Cp%3ESave%20Recipe%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EBring%201%C2%BC%20cups%20wine%20to%20boil%20in%20small%20saucepan%20over%20medium-high%20heat,%20and%20cook%20until%20reduced%20to%201/3%20cup;%20approximately15%20to%2020%20minutes.%20Set%20aside.%3C/p%3E%3Cp%3EAdd%20remaining%20wine%20and%20sugar%20to%20a%20large%20saucepan%20and%20bring%20to%20a%20boil,%20stirring%20frequently.%20Stir%20in%20pectin,%20lemon%20juice,%20and%20butter,%20and%20return%20to%20vigorous%20boil,%20stirring%20constantly,%20for%201%20minute.%3C/p%3E%3Cp%3ERemove%20from%20heat%20and%20stir%20in%20the%20reduced%20wine.%3C/p%3E%3Cp%3EUsing%20hot,%20sterilized%20jelly%20jars,%20fill%20jars%20just%20to%20rim;%20add%20lid%20until%20just%20tight%20and%20let%20cool%20to%20room%20temperature%20before%20refrigerating.%3C/p%3E%3Cp%3ETo%20be%20fully%20set,%20put%20in%20refrigerat
