Pink Squirrel Cupcakes

Do you remember the ice cream drink called a Pink Squirrel? I do and it was my favorite! It was made with creme de cacao, creme de almond, which gives it the pink color and vanilla ice cream. Blended in a blender and you have a A Pink Squirrel Shake! I thought, why not make Pink Squirrel Cupcakes or a Pink Squirrel Cake. I have made these cupcakes using a box mix and canned frosting and I have also made a layer cake using a basic 1-2-3-4 cake recipe with a cream cheese frosting. Either way, they are both great and to me they taste very close to the real thing. If you have never tried a Pink Squirrel, whip one up...there is nothing better than the real thing!

Pink Squirrel Cupcakes

1 box Funfetti Cake mix

18 creme de Pirouline Artisan Rolled Wafers

paper liners

Preheat oven to 350

Line muffin tin with paper liners Set aside.

Blend cake mix,oil, eggs, creme de almond, creme de cacao, and creamer in a large bowl until moistened. Beat with a mixer on medium speed for 2 mins. Batter will be thick.

Fill cupcake liners 2/3 full.

Bake at 350. for 18-20 mins. or until toothpick inserted in center comes out clean.

Remove cupcakes to wire rack. Cool completely.

Frost when cool.

In medium bowl spoon frosting. Add 1 t almond extract and 2 drops red food coloring. Stir until mixed.

Frost cupcakes and decorate with dragees and Pirouline rolled wafers
