Pink Grapefruit Recipe with Honey Mint Syrup

This refreshing fruit salad recipe highlights pink grapefruits, mixed with an easy honey mint syrup. Serve this as a healthy snack or brunch dish.

I have been a sucker for grapefruits ever since I was a kid. Whenever we visited my grandparents at their cottage, grapefruits would be on the menu for breakfast, carefully segmented and sprinkled with a little sugar. These days, my younger son and I are the ones that get excited for citrus season, stalking the grocery stores for the times that pink grapefruits go on sale. And then it’s grapefruit for breakfast and snack, everyday of the week.

I recently saw a post on Facebook, asking whether people liked to eat their grapefruit with salt or sugar. Salt?! No way – when it comes to grapefruit, I’m a sweet kind of gal. But just a little sweetness so that the natural tartness of the fruit still shines through. So, I whipped up a very easy honey and mint syrup for this fruit salad recipe, steeping some fresh, sliced mint leaves in a boiling water-honey mixture. Just a touch of sweetness to bring out the flavors of the grapefruit.

If you’ve never tried segmenting citrus fruit, or have tried but succeeded in making a huge mess (been there, done that), I have a very easy tutorial for you. Serve this up as an afternoon snack or as a side dish for your weekend brunch.

Cut the peel of the pink grapefruits and cut the segments away from the membranes (see How to Segment Citrus Fruits). Place the segments in a bowl, reserve the juice for another use and discard the membranes. In a small bowl, combine the boiling water and honey, and stir until the honey dissolves. Stir in the mint leaves and steep for 5 minutes. Pour the honey mixture over the grapefruit and toss gently to combine. Serve.
