I came across a recipe recently for Dole Whip. That's a fruity soft serve that's available at Disney and other theme parks. There are several versions online which are simpler and more natural that the commercial version. This is what I tried yesterday (adapting for what I had on hand) as a summery dessert for a three course meal.

We've become big fans of the BBC program Come Dine With Me. If you're not familiar with it, four strangers take turns hosting dinner parties with their 3 guest giving them a grade at the end of the evening. The winner walks away with £1,000. The cooks talk about what their doing during the prep and they and the guests are interviewed during the evening - kind of play-by-play action. The best part is the smart mouthed narrator, who never appears on screen.

We joked around during the day about it being like an episode of Come Dine with Me before our guests arrived. We filled them in on the story line and they got into the spirit by asking, "did you make this or buy this?"

I had to say that if I was going for the £1,000, I should have let the sherbet sit at room temperature for about 7 or 8 more minutes before serving. The texture was just right as we neared the bottom of the bowls. It's something that I'd like to try with other fruits.

Peel, core, and cut the pineapple into small chunks; freeze

Add the frozen pineapple, lemon juice, honey, and milk to a food processor or blender. I used an immersion blender

The texture after blending was like soft-serve

If you freeze it before serving, allow it to sit at room temp for about 15 minutes before dishing it up

Makes 5 - 6 servings
