Pineapple Pie With Meringue

Ингредиенты

  • 1 1/2 (16 ounce.) cans crushed pineapple
  • 1 1/4 c. sugar
  • 3 egg yolks (reserve egg whites)
  • 3 tbsp. cornstarch
  • 1 baked deep dish pie shell

Инструкции

  1. Mix sugar and cornstarch together, then stir into crushed pineapple. Microwave for 5 min on high. Stir occasionally. Cook till mix thickens. Then mix egg yolks in c.. Add in 3 Tbsp. of warm pineapple mix. Stir, then add in to warm pineapple. Pour into baked pie shell.
  2. Make meringue. Beat egg whites and cream of tartar till stiff. Add in sugar. Scoop onto warm pineapple pie, smooth out and bake 5-8 min at 400 degrees till meringue is very light brown. Remove from oven and cold. Chill.
