Today is The Secret Recipe Club Reveal Day
I have two delicious recipes for you from the
wonderful blog, Enriching Your Kid
I was so pleased when I was assigned Shirley's
wonderful blog. Having three grand-kids
under the age of five, I was so happy to be
able to try out new recipes, that I knew they would love.
The Secret Recipe Club is divided into 4 groups.
Group A, B, C and D.
Every month, each member is assigned a blog from their group.
We then get to stalk our assigned blog, pick a recipe and
prepare the recipe.
After we prepare our chosen recipe, we photograph it,
and then we get to eat it~
On our assigned Reveal Day,
we reveal who had who and
what everyone made from their "secret" blog.
The Secret Recipe Club is a great way to discover new blogs and
to discover new delicious recipes!
Today is Reveal Day for Group D,
The group that I'm in.
My assigned blog this month was:
Enriching Your Kid!
Shirley is a Clinical Psychologist by profession.
She decided to become a stay at home mom when
her children were born.
Shirley says "Cooking for kids is a challenge that every parent faces. To prepare something nourishing as well as enticing for kids is a challenge."
Amen to that Shirley!
My oldest grandson is 4 and
he is a picky eater, in fact, he doesn't like anything.
I was so happy when he gobbled down these delicious waffles!
He preferred maple syrup on his waffles but we liked both,
the jam and syrup.
The jam is perfect on the waffles or on a toasted bagel,
spread with a thin layer of cream cheese.
Another idea....
Delicious!
My grandson tells anyone who will listen about these waffles and
Grandma's "pancake machine" a.k.a. "waffle maker."
The next time my grandson comes for a visit,
I'm going to make him: Alphabet Soup,
Mac and Cheese and Bread Pudding.

Pineapple Jam
Ingredients
1
pineapple
2/3 cup
sugar
3 cloves
cardamom
Cooking Directions
Cut, clean and decore pineapple
Cut into small pieces
Place pineapple in a saucepan
Peel cardamom and crush
Set aside
Add sugar to saucepan, stir
Cook over medium heat
Continue to cook, stirring constantly
for 10 minutes
Remove saucepan from heat
Cool completely
When cool, puree in blender
Return mixture back to saucepan,
Cook mixture again until it reaches jam consistency.
Add crushed cardamom
Take off heat
Cool
Pour jam into sterilized jars
Oatmeal Pancakes (Waffles)
Ingredients
- 2 cups
- oats
- 1
- egg
- 1/4 cup
- Greek (pineapple) yogurt
- 1/2 t
- baking powder
- 1 T
- jaggery (honey)
- 1/2 t salt
- 1/2 to 1 cup water
- Cooking Directions
- Grind oats in a blender
- Add the remaining ingredients
- Mix well in blender, adding water to get a smooth batter
- Pour the batter on a hot griddle or waffle iron
Sprayed with non-stick spray
Cook until golden brown
Serve with Pineapple jam, Syrup and/or Honey
