2 (8 ounce.) Packages cream cheese (softened) 1/4 c. plus 1 tbsp. pineapple juice 1 tbsp. lemon juice 1 tbsp. grated orange rind

1 1/2 to 2 teaspoon grnd ginger 1/4 c. flaked coconut, toasted 2 tbsp. powdered sugar (optional)

1. Beat cream cheese till light and fluffy. Stir in remaining ingredients. Serve with fresh fruit. Yields 2 c.. This is delicious with fruit.
