- 1/3 c. sugar
- 1 can crushed pineapple (8 ounce.)
- Â Â with juice
- 1 Tbsp. cornstarch

- 1 pkt cream cheese (8 ounce.)
- 1/2 c. sugar
- 2 x Large eggs
- 1/2 tsp vanilla
- 1/4 c. pecans minced (optional)
- 1 tsp salt
- 1/2 c. lowfat milk
- 1 x unbaked 9" (or possibly deep dish)
- Â Â pie crust

- Cook sugar, crush pineapple with juice and cornstarch till thick.
- Cold and set aside.
- Beat cream cheese, sugar and salt. Add in Large eggs one at a time. Blend in lowfat milk and vanilla. Spread cooled pineapple mix over bottom of piecrust - pour cream cheese mix over the top of the pineapple mix. Sprinkle with nuts (I leave them out). Bake 400 for l0 min; then 325 for approx. 50 min.
