- Heat sausages in a small amount of water in a covered skillet over low heat.
- Stack tortillas and quarter them (the way you would cut a pie or pizza, so you end up with wedge-shaped pieces).
- When sausage is heated through, spread tortilla wedges on a plate and microwave for 20 - 30 seconds so they are warm enough to roll without breaking.
- Working quickly, roll each sausage up in a tortilla wedge, starting from the wide end and tucking in the excess as you go to create a little "envelope" around the sausage.
- Secure with a toothpick.
- Serve with your favorite dipping sauce (maple syrup, mustard, honey, bbq sauce, ranch dip, etc.)
