When Parrish and I were dating, well before my Celiac diagnosis, we would often go out to eat for the sole purpose of finding the perfect Philly Cheesesteak Sandwich.
Since going gluten free nearly SEVEN years ago (!!!) I haven’t had a cheesesteak. But lately, I’ve been thinking more and more about those random nights in Wilmington with Parrish. The melty cheese – the crisp buttery bun. So I knew it was time.
There were a few restaurants in Wilmington we loved, and each one had three key features: toasted buns, tons of veggies, and ooey gooey melted cheese.

%20I%20haven%E2%80%99t%20had%20a%20cheesesteak.%20But%20lately,%20I%E2%80%99ve%20been%20thinking%20more%20and%20more%20about%20those%20random%20nights%20in%20Wilmington%20with%20Parrish.%20The%20melty%20cheese%20%E2%80%93%20the%20crisp%20buttery%20bun.%20So%20I%20knew%20it%20was%20time.%3C/p%3E%3Cp%3EThere%20were%20a%20few%20restaurants%20in%20Wilmington%20we%20loved,%20and%20each%20one%20had%20three%20key%20features:%20toasted%20buns,%20tons%20of%20veggies,%20and%20ooey%20gooey%20melted%20cheese.%3C/p%3E%3Cp%3EFor%20the%20bun%20I%20used%20Rudi%E2%80%99s%20gluten%20free%20Whole%20Grain%20Hot%20Dog%20Buns.%20I%20cut%20them%20in%20half%20and%20then%20microwaved%20them%20for%2020%20seconds%20to%20get%20them%20soft%20before%20going%20in%20the%20oven.%3C/p%3E%3Cp%3EFor%20veggies,%20I%20thinly%20sliced%20red%20pepper,%20green%20pepper,%20and%20white%20onion,%3C/p%3E%3Cp%3Eand%20then%20sauteed%20them%20on%20medium%20low%20with%20a%20bit%20of%20olive%20oil%20until%20they%20caramelized%20in%20my%20cast%20iron%20skillet.%3C/p%3E%3Cp%3EFor%20cheese,%20I%20used%20a%20new-to-me%20block%20of%20Cabot%20Cheese%20that%20I%20found%20at%20my%20local%20Harris%20Teeter:%3C/p%3E%3Cp%3EAs%20soon%20as%20I%20saw%20the%20%E2%80%9CBold%20&%20Creamy%E2%80%9D%20product%20note,%20I%20knew%20I%20had%20to%20use%20it%20for%20these%20sandwiches.%20I%20used%20big%20shreds%20instead%20of%20slices%20so%20that%20I%20could%20get%20more%20coverage%20without%20going%20overboard%20on%20the%20cheese.%20(%20Like%20you%20could%20ever%20go%20overboard%20on%20cheese?!)%3C/p%3E%3Cp%3EFor%20the%20steak%20I%20simply%20cut%20some%20thinly%20sliced%20strip%20steak%20into%20small%20bite-size%20long%20strips,%20and%20gave%20it%20a%20quick%20saute%20in%20my%20cast%20iron%20skillet.%20I%20cooked%20the%20steak%20to%20medium,%20since%20I%20knew%20I%20was%20also%20going%20to%20broil%20the%20entire%20sandwich%20in%20the%20oven.%20Nothing%20worse%20than%20overcooked%20steak!%3C/p%3E%3Cp%3ETo%20assemble,%20I%20topped%20the%20open%20faced%20buns%20with%20a%20bit%20of%20cheese,%20then%20a%20few%20strips%20of%20cooked%20steak,%20a%20big%20handful%20of%20caramelized%20veggies,%20and%20then%20sprinkled%20more%20cheese%20on%20top.%3C/p%3E%3Cp%3EOnce%20all%20the%20bread%20pieces%20were%20topped,%20I%20popped%20them%20in%20the%20oven%20on%20High%20Broil%20and%20let%20them%20cook%20until%20the%20cheese%20was%20melted%20and%20the%20bun%20had%20toasted%20a%20bit.%20Be%20sure%20to%20keep%20an%20eye%20on%20the%20sandwiches%20while%20broiling.%20You%20can%20go%20from%20perfect%20to%20burnt%20in%20just%20a%20few%20seconds.%3C/p%3E%3Cp%3EI%20decided%20to%20go%20open-face%20sandwiches%20for%20two%20reasons:%201.%20Gluten%20free%20bread%20is%20so%20thick%20and%20I%20didn%E2%80%99t%20want%20the%20bread%20portion%20to%20overpower%20any%20of%20the%20sandwich%20portions,%20and%202.%20I%20knew%20I%20would%20want%20to%20eat%20two%20sandwiches%20(because%20they%20were%20so%20delicious),%20so%20this%20way%20I%20still%20only%20had%20one%20bun.%3C/p%3E%3Cp%3EThese%20sandwiches%20really%20turned%20out%20great.%20I%20was%20super%20impressed%20by%20how%20easy%20they%20were%20to%20throw%20together.%20But%20you%20wanna%20know%20what%20took%20the%20flavors%20to%20the%20next%20level?%3C/p%3E%3Cp%3EHOME.%20MADE.%20MAYO!!!!!%3C/p%3E%3Cp%3ETo%20be%20more%20precise:%20Garlic%20Aioli%20but%20it%20started%20out%20as%20mayo.%3C/p%3E%3Cp%3ENow%20let%20me%20say,%20I%20don%E2%80%99t%20like%20mayonnaise%20from%20a%20jar.%20I%E2%80%99ve%20never%20liked%20it.%20I%20hate%20the%20flavor%20and%20the%20texture.%3C/p%3E%3Cp%3EBUT%20I%20LOVE%20freshly%20made%20mayo.%20The%20ingredients%20are%20super%20simple:%3C/p%3E%3Cp%3E1%20egg%20%E2%80%93%201%20cup%20of%20light%20tasting%20olive%20oil%20%E2%80%93%20Juice%20from%201/2%20of%20a%20lemon%20%E2%80%93%20a%20tiny%20squirt%20of%20mustard%20%E2%80%93%20a%20pinch%20of%20salt%3C/p%3E%3Cp%3EPut%20all%20the%20above%20in%20a%20glass%20mason%20jar,%20and%20using%20your%20immersion%20blender.%20Blend!%3C/p%3E%3Cp%3EYep.%20It%E2%80%99s%20that%20easy.%20Crazy%20easy%20in%20fact.%20I%20followed%20this%20recipe%20HERE%20from%20The%20Healthy%20Foodie%20and%20couldn%E2%80%99t%20have%20been%20happier%20with%20it.%20I%E2%80%99ve%20tried%20a%20few%20different%20mayo%20recipes%20with%20no%20luck,%20so%20I%20was%20shocked%20by%20how%20easy%20this%20was!%3C/p%3E%3Cp%3EAfter%20I%20made%20the%20first%20batch,%20I%20scooped%20out%20a%20bit%20of%20plain%20mayo%20and%20then%20added%20minced%20garlic%20and%20a%20dash%20of%20pepper%20to%20my%20mixing%20jar.%3C/p%3E%3Cp%3EThe%20result%20was%20a%20spicy,%20garlicky%20mayo%20that%20was%20perfect%20for%20our%20sandwiches.%20We%20literally%20just%20dipped%20our%20sandwiches%20in%20it%E2%80%A6..and%20maybe%20a%20finger%20or%20two.%3C/p%3E%3Cp%3ECheesesteak%20Sandwiches%20are%20definitely%20being%20added%20in%20to%20the%20Weekly%20Menu%20Rotation!%20I%20can%E2%80%99t%20wait%20to%20have%20a%20leftover%20slider%20for%20lunch%20today%20%E2%80%93%20especially%20
