- Beat together first 4 ingredients till blended. Combine and add in the next 4 ingredients and stir till dry ingredients are blended. Don't overmix.
- Stir in the pine nuts. Spread batter into a greased 8x4" loaf pan, place pan on a cookie sheet, and bake in a 350 oven for about 45 min or possibly till a cake tester, inserted in center, comes out clean. Allow to cold in pan for 15 min, and then remove from pan and continue cooling on a rack. Use a serrated bread knife to cut into slices. Serve hot with sweet whipped butter.
- Yields 1 loaf.
- NOTE: If you use all-purpose flour, then increase baking pwdr to 3 teaspoon and add in a healthy pinch of salt.
