%3C/p%3E%3Cp%3EWhen%20it%20comes%20to%20cooking,%20I%20go%20through%20phases%20where%20I%20become%20enraptured%20with%20certain%20types%20of%20cuisine.%20For%20instance,%20I%20can%20recall%20going%20through%20a%20stir-fry%20phase,%20a%20Thai%20cuisine%20phase,%20a%20Greek%20cuisine%20phase%20and%20I'm%20pretty%20sure%20my%20earliest%20food%20love%20affair%20was%20with%20Italian%20food.%20Well,%20now%20I%20am%20onto%20Persian%20food,%20and%20eating%20Paleo%20at%20the%20same%20time%20is%20a%20bit%20of%20a%20challenge,%20but%20I%20am%20up%20for%20it!%3C/p%3E%3Cp%3EOne%20of%20my%20latest%20Persian-inspired%20creations%20are%20stuffed%20peppers,%20or%20dolmeh,%20but%20I%20used%20baby%20peppers%20(kouchoulou...such%20a%20cute%20word)%20that%20have%20been%20in%20season%20at%20my%20market%20lately.%20I%20used%20the%20basic%20kebab%20meat%20recipe%20of%20ground%20beef%20(lamb%20can%20be%20used%20too),%20onion,%20and%20saffron%20and%20used%20the%20mixture%20to%20stuff%20the%20mini%20peppers.%20I%20topped%20the%20peppers%20off%20with%20a%20sweet%20and%20tangy%20sauce%20made%20from%20a%20base%20of%20tomato%20paste,%20which%20is%20so%20popular%20in%20Persian%20recipes.%20I%20loved%20these%20so%20much%20I%20made%20them%20twice%20in%20one%20week!%20The%20first%20time%20I%20made%20them%20I%20cut%20the%20tops%20of%20the%20peppers%20off%20and%20then%20stuffed%20them,%20but%20I%20found%20I%20couldn't%20fit%20much%20stuffing%20into%20each%20pepper,%20but%20they%20did%20look%20cute.%20This%20method%20where%20I%20cut%20the%20peppers%20into%20little%20boats%20is%20much%20easier%20to%20do%20and%20you%20get%20more%20meat%20per%20pepper.%20The%20meat%20is%20accented%20by%20the%20peppers,%20which%20are%20sweet%20and%20once%20they%20are%20topped%20with%20their%20sweet%20and%20sour%20sauce,%20are%20broiled,%20which%20gives%20a%20nice%20little%20roasted%20flavor.%20These%20are%20the%20perfect%20accompaniment%20with%20any%20steamed%20vegetable,%20particularly%20cauliflower%20rice%20and/or%20a%20nice%20salad,%20such%20as%20my%20Marinated%20Baby%20Cucumber%20Salad.%20Because%20they're%20so%20small,%20they%20aren't%20as%20heavy%20as%20the%20usual%20stuffed%20peppers.%20I%20think%20these%20would%20be%20a%20great%20hot%20appetizer%20at%20a%20party,%20too.%3C/p%3E%3Cp%3EPersian%20Stuffed%20Mini%20Peppers%20(Dolmeh-Kouchoulou)%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20400%20degrees%20F.%20Grease%20a%2013x9%20non-reactive%20baking%20pan%20and%20set%20aside.%3C/p%3E%3Cp%3E2.%20Mix%20the%20meat,%20egg,%20onion,%20saffron,%20parsley,%20and%20some%20salt%20and%20pepper%20together%20in%20a%20medium%20bowl.%20Your%20hands%20work%20best%20for%20this%20job.%3C/p%3E%3Cp%3E3.%20Cut%20all%20the%20peppers%20in%20half%20lengthwise%20and%20scoop%20out%20any%20seeds%20and%20pith.%20Arrange%20the%20peppers%20in%20the%20pan%20alternating%20stem%20ends%20to%20get%20a%20tight%20fit.%3C/p%3E%3Cp%3E4.%20Taking%20out%20one%20pepper%20at%20a%20time,%20fill%20with%20a%20level%20amount%20of%20the%20meat%20mixture.%20Repeat%20with%20all%20the%20peppers.%3C/p%3E%3Cp%3E5.%20Bake%20for%2020%20minutes,%20or%20until%20the%20meat%20is%20done.%20While%20they%20are%20baking,%20blend%20the%20tomato%20paste,%20water,%20vinegar,%20oil,%20honey%20and%20a%20little%20salt%20and%20pepper%20in%20a%20small%20bowl.%20After%20the%2020%20minutes,%20pour%20the%20sauce%20over%20the%20peppers%20and%20return%20to%20the%20oven%20for%2010%20more%20minutes.%20After%20that%20time,%20raise%20the%20pan%20to%208-10-inches%20from%20the%20top%20of%20the%20oven,%20and%20broil%20for%20about%205%20minutes,%20or%20until%20the%20sauce%20bubbles%20and%20the%20edges%20of%20the%20peppers%20become%20slightly%20charred.%20You%20may%20have%20to%20rotate%20the%20pan%20once%20through%20for%20even%20browning.%20Allow%20to%20rest%20for%203%20minutes%20before%20serving.%3C/p%3E%3Cp%3EServings%20per%20recipe:%206%3C/p%3E%3Cp%3EPer%20serving:%3C/p%3E%3Cp%3ECalories:%20216.3%3C/p%3E%3Cp%3EFat:%2015.1%20g%3C/p%3E%3Cp%3ESaturated%20fat:%201.3%20g%3C/p%3E%3Cp%3ECholesterol:%2073.4%20mg%3C/p%3E%3Cp%3ESodium:%20%20274.4%20mg%3C/p%3E%3Cp%3ECarbohydrates:%207.9%20g%3C/p%3E%3Cp%3EFiber:%202.6%20g%3C/p%3E%3Cp%3ESugar:%20%204.6%20g%3C/p%3E%3Cp%3EProtein:%2012.6%20g%3C/p%3E){kind=link}
