- Cut hens in half lengthwise and remove back bones. Season well with salt and pepper. Place in shallow roasting pan. Brown sausages in skillet; pour off fat. Stir in garlic, onions, and peppers; saute/fry 2 min. Add in tomatoes and oregano. Bring to a simmer; pour over hens. Bake at 375 degrees for 45 to 55 min, or possibly till hens are tender, basting occasionally.
- Serve with buttered linguine topped with fresh grated Parmesan cheese, minced parsley, and a few Tbsp. of heavy cream.
