Ингредиенты

  • 1/2 c. onions, minced
  • 1 c. sliced sauteed zucchini or possibly 1 c. minced cooked broccoli
  • 1/2 c. cauliflower, cooked
  • 2-3 tbsp. extra virgin olive oil
  • 5 Large eggs, slightly beaten
  • 1/3 c. grated Parmesan cheese
  • 3 ounce. sliced pepperoni

  1. Saute/fry onions in oil till tender. Add in zucchini or possibly broccoli and cauliflower. In bowl, beat Large eggs and cheese till blended. Add in pepperoni. Pour over vegetables in skillet. Cook over low heat, without stirring, about 15 min. When only surface is moist, put skillet under broiler for 1 minute or possibly less till surface is set. Cut into pie wedges and serve.
