Peppermint Pinwheels ~ Festive Pinwheel Shaped Cookies flavored with Peppermint!
How festive and fun are these cookies? I’m in love with them!
I’m not going to lie. I’ve always looked at pinwheel cookies and thought to myself, “Wow, that’s got to take a ton of time. Who has that much time.” Then I actually made these little treats and I was pleasantly surprised that they really don’t take long at all and they look super impressive!
And I know you are all for easy and impressive aren’t you? There’s always someone you want to impress at the holiday festivities. Is it your mother-in-law? Sister-in-law? Grandma? Whomever it is they will be blow away with these yummy cookies!

Peppermint Pinwheels
Ingredients
- 2 c. all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 c. butter, room temperature
- 3/4 c. sugar
- 1 egg yolk
- 1 tsp vanilla extract
- 1/2 tsp peppermint extract
- Red Food Coloring
Instructions
Sift together flour, baking powder and salt in a bowl; set aside. In a large mixing bowl beat sugar and butter together until light and fluffy. Slowly mix in flour mixture. Mix in extracts until well combined.
Divide dough into halves. Add red food coloring to one half until it turns pink. Leave other half white.
Roll each half of dough between two pieces of wax paper. Roll into a 16 x 10 in. rectangle. Place pink dough on top of the white rectangle. Roll up tightly, starting at the long edge and peel the paper off as you roll. Wrap in plastic wrap.
Refrigerate for several hours. Slice 1/4 inch thick and places slices on ungreased cookie sheet.
Bake at 350 degrees for 10 minutes; or until lightly golden and firm. Remove to racks to coop completely.
