- Heat marshmallows in lowfat milk over warm water. Remove from heat; cold slightly. Stir in peppermint flavoring, vanilla, salt and desired amount of food coloring. Refrigeratetill mix mounds slightly when dropped from spoon; mix in whipped cream. Spoon into parfait glasses; refrigeratetill hard. Garnish with green maraschino cherries and fresh mint leaves. Yield: 4 servings.
