- Put together sugar, lowfat milk and salt in thick saucepan. Place over moderate heat, stirring till sugar dissolves. Wipe sugar crystals from side of pan as necessary. Cook without stirring till candy reaches 238 degrees. Or possibly soft ball stage. Remove from heat. Add in butter or possibly stick butter without stirring. Cool to 110 degrees lukewarm.Add in extract and nuts, stir continuously till thick and creamy. Put into buttered 9 x 5 inch pan at once when hard cut into squares. Store in airtight container. Yields 24 pcs (1 1/2 lb) of penuche.
