Peking Chicken Breasts

- 16 ounces boneless skinless chicken breasts
- MARINADE:
- ¼ cup white wine vinegar
- ¼ cup loosely packed brown sugar
- 1 teaspoon sweet soy sauce
- ½ teaspoon ground ginger
- 1 Tablespoon low sodium soy sauce
- ½ teaspoon sesame oil
- ½ teaspoon Chinese 5 spice powder
- 1 Tablespoon honey
- BASTING SAUCE
- 3 Tablespoons brown sugar
- 1 Tablespoon white vinegar
- 1 Tablespoon low-sodiium soy sauce
- 1 Tablespoon honey
Mix together the ingredients for the marinade and add the chicken.
Marinate for 2 hours or longer if you have the time.
In a small cup or bowl, mix together the ingredients for the basting sauce and set it aside.
Turn the broiler on high and place the chicken breasts on a broiler pan. Place the pan on the middle rack in the oven for 5 minutes.
After 5 minutes, remove the chicken and baste it. Then place the pan directly under the broiler so that the chicken sits about 3 inches from the element. Cook it for 2 minutes, then remove it and baste it again.
Again place the chicken directly under the broiler, cook it for 1 minute and then baste it again. Do this again for 2 minutes, and then baste. Then cook it a final 2 minutes and remove it from the oven without basting. Depending on the pan that you use, the marinade itself may actually burn and smoke on the bottom of the pan. This is normal as long as the chicken itself is not burning.
Serve with rice.

Okay, so it’s not traditional. Before you even mention, I know that I didn’t marinate it for two days. But hey, I am just a girl in a kitchen trying to create healthier versions of dishes that you might not ever even thought about trying to make. This recipe comes fairly close to getting a crispy affect, even though it’s boneless and skinless.
I do the experimenting for you and you just make what you read. Make my Miso Butter Green Beans with this dish. I did.
Now if I can figure out a better way to get my broiler to evenly broil the chicken breasts.
