Ингредиенты

  • 6 x Boned and skinned chicken breast halves
  • 1 c. Flour
  • 2 x Large eggs
  • 1 c. Lowfat milk
  • 1 c. Finely minced pecans
  • 1/4 c. Bread crumbs
  • 1 Tbsp. Extra virgin olive oil
  • 3 x Shallots
  • 1 Tbsp. Chopped garlic
  • 1 quart Cider
  • 2 c. Demi glace
  • 1/2 c. Heavy cream
  •     Salt and pepper, to taste

Инструкции

  1. Combine pecans and breadcrumbs.
  2. Mix Large eggs and lowfat milk.
  3. Place chicken in flour, then lowfat milk and Large eggs and finish in pecans.
  4. Heat a skillet with oil and pan fry till brown.
  5. Bake in 350 degree oven till done (about 30 min)
  6. Place oil in sauce pan and heat. Saute/fry shallots and garlic.
  7. Add in cider and simmer till reduced by half.
  8. Add in remaining ingredients and simmer till thick
  9. NOTES : Knorr's Demi-Glace in a dry package mix can be used for this amazing sauce.
