Pear and Walnut Salad
Ever since I started running, I have had the itch to try different trails. The hubby just recently decided that he wouldn’t mind running with me occasionally.
So when I mentioned that I wanted to take a walk along the Monterrey Bay Coastal Trail, he was all for it.
We should have done a longer walk but our hunger got the best of us.
We stopped for lunch and walked around Cannery Row checking out all the shops instead.
At The Garlic Lovers store, we picked up a bottle of Pomegranate Balsamic Vinegar. Funny that we didn’t buy anything with garlic in it though.
And with that bottle for inspiration, I made a Pear and Walnut Salad with a Pomegranate Balsamic Vinegar and Lime Olive Oil Dressing.
Pear and Walnut Salad with Pomegranate Balsamic Vinegar Dressing

Ingredients
- Enough Green Leaf lettuce for two salads, chopped
- 1 ripe pear
- 2 Tablespoons. dried craisins
- 1 ounce walnut coarsley chopped (about ¼ cup)
- 1 Tablespoons. Pomegranate Balsamic Vinegar
- 1½ Tablespoon Olive Oil
- 1 teaspoon Lime Zest
- 1 teaspoon Lime juice
- 1 ounce Gorgonzola Cheese in broken into small chunks
Directions
Divide lettuce into two salad bowls
Quarter and core the pear into thin slices and place ½ of pear on lettuce in each bowl
Sprinkle each with walnuts and cranberries
In a small bowl whisk the balsamic vinegar, olive oil lime juice and zest
Drizzle the dressing over the salad
Sprinkle Gorgonzola cheese on top

I told the hubby that we need to become more active as we grow older together. It was so great to hear him agree with me and get me excited to plan our next outdoor day trip. I have a place in mind where we can do a hike, then drive to the Gilroy factory outlets and get our shopping on. I am one lucky lady because the hubby loves to hunt. Hunt for bargains, that is.
Oh, the place I have in my mind is the Coyote Creek Trail. I hope we get to it this coming weekend.
