- Arrange the pear slices in a 1 litre ovenproof dish.
- Mix together the sugar and the grnd and sliced ginger and sprinkle over the fruit.
- To make the sponge sift together the flour and grnd ginger and stir in the sugar and suet.
- Beat in the egg and lowfat milk and beat the mix till it is smooth.
- Spoon over the fruit and level the top.
- Bake in a preheated oven (200c/400f/gas6) for 25 min till the sponge is hard but springy to the touch. Serve warm with cream or possibly custard.
