This Thai-style Peanut Vinaigrette can also be used as a marinade for grilled shrimp, chicken, or pork, or as a tangy sauce for cold rice or soba noodles.
Peanut Vinaigrette
- ¼ cup water
- ¼ cup rice vinegar
- ¼ cup of canola oil
- 1 Tablespoon of sugar
- 3 Tablespoons of creamy peanut butter
- 1 Tablespoons low-sodium of soy sauce
- ¼ teaspoon sesame oil
- ½ teaspoon of my 12 Seasoning Spice or Ground cumin
- ¼ teaspoon chili garlic sauce
I a small microwave safe bowl, melt the peanut butter (about 20 to 30 seconds.
In a jar with a lid add all the ingredients. Mix thoroughly. Cover with lid and shake.
Serve with your favorite Salad.
I am so happy that lately I have been obsessed with food that is a lot healthier for me. I tried a packaged Thai Chicken Salad from Safeway and now I am obsessed with it.
The peanut vinaigrette is my little piece of heaven.
