Рецепт Peanut Butter, Oatmeal, Chocolate Chunk Cookies
I’ve decided to re-post my favorite Christmas cookies. The original posts are so old that they’re not really ‘searchable’ on Google, Bing, etc. (wrong format – don’t ask).
Besides, they’re so good and so easy they’re all worth sharing again, right?
And these could really be considered healthy – peanut butter, oats….
Breakfast of champions – at least for me.
I really love sweets for breakfast. I blame it all on my father. He did the weekly shopping when I was a child (I have no idea why…) and he always stopped at the bakery on the way home. He bought sweets for Sunday breakfast: a few different kinds of donuts and as many assorted pastries as he thought he could sneak in the house without my mother, er, voicing an objection to his choice of breakfast food.
It’s all his fault…. He would have loved these.
Peanut Butter, Oatmeal, Chocolate Chunk Cookies
Total time: 1 hour
Ingredients:
- 1/2 cup butter, soft
- 1/2 cup creamy peanut butter
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 egg
- 1 tsp vanilla
- 1 1/2 cups rolled oats (flakes)
- 1/2 cups flour
- 1 tsp baking soda
- 1 cup (6oz (180gr) good, dark or milk chocolate chunks
Instructions:
Pre-heat oven, 350F (180C)
Cream butter, peanut butter, brown sugar, and sugar.
Blend in egg and vanilla.
Combine oats, flour, soda, and blend into creamed mixture.
Stir in chocolate chunks.
Shape dough into 1-inch balls & place on baking sheet lined with parchment paper.
Bake at 350F (175)C for 10 – 11 minutes or just until edges are golden.
Cool 1 minute on sheet remove and cool completely.
I started using parchment paper to bake cookies on a few years ago. I have no idea why it took me so long…. It makes the entire baking go so much more quickly and is so easy. No more buttering and washing cookie sheets between each batch.
This recipe makes about 3 1/2 dozen small cookies. (I no longer want to bake big cookies in big batches like I did when I was a teenager.) They keep well and freeze beautifully. I store all my holiday baking in the freezer – reduces temptation for both of us.
As to other news – we’ve been enveloped in pea-soup fog for the last few days. I can hear the digger and trucks working on the lake, and occasionally see their headlights but the fog is too thick for much more.
It’s all rather ghostly…..
So I’m lighting early fires in the stove and fireplace and putting up the Christmas tree.
I can pretend the white fog is snow…. I only want ‘pretend’ snow, and even that only for a few days. I’ll be very happy when the warm sunshine returns.
Even the dogs don’t want to be outside in this.
