A sweet indulgence – making Fudge is very common during festivals and many religious ceremonies in India. Though Wiki defines it as a western confectionery, for me a fudge is what completes any Indian festivity as long as I remember. From the humble melt-in-mouth Besan ki chakki (chickpea flour fudge) to the more exotic Kaju Katlis (cashew fudge) Indian festivals are incomplete without these goodies. With loads of sugar, butter and milk to go into making these fudge, these goodies are truly a sinful indulgence!

Peanut butter fudge is high on calories but if eaten in moderation it could provide all the health benefits attached with peanuts in your diet. These Nutty Peanut butter Fudges are highly addictive and a word of caution is to keep a tab on the number of times you open your refrigerator

Various flavorful condiments and ingredients are added to give delicate texture and exotic tastes to the fudges. It requires constant monitoring to get the soft ball stage and the desired consistency to make into perfect melt-in-mouth fudge.

My July’s Secret recipe club assignment from Amanda is Melissa’s blog and I chose her chocolaty peanut butter fudge. I like her recipe as it has very few ingredients and makes a perfect dessert for a quick sweet craving. I wanted to make it more appealing and healthy for my kids with the nuts and chocolate layer on the fudge. The caramel on top with the nuts gave a perfect crunch to the soft and creamy fudge below.

Ingredients;

Spread the nuts over the fudge.

Method; Heat butter/ghee in a thick bottom pan and add honey & peanut butter to it, keep the flame at low and mix well. Peanut butter will melt in just 1-2 minutes, take off the flame and add powder sugar and vanilla essence to it. Mix it well.

You can microwave the above mix for about 1 minute on high to get the same results.

Grease a 8×8” square pan or spread a parchment paper and grease it lightly.

Caramel coating..

Coarsely chop the nuts (can take any combination of nuts) and keep it aside. Melt the chocolate with caramel inside simultaneously on a double boiler, the caramel will be hard to melt and will remain thick and very sticky. Pour the melted peanut butter mix in the greased pan and tap it lightly to remove any bubbles in it.

Refrigerate for 10 minutes and take it out. Sprinkle the chopped nuts over the set fudge.

Pour the melted chocolate and caramel over the nuts. Refrigerate again for 1-2 hours before slicing into pieces.

Free flowing caramel..Yum!

I took the 5 starts chocolate bars and melted it over a double boiler. Cooled it for 1 minute and poured the caramel and chocolate over the nutty fudge. The caramel will not spread evenly and give a bumpy looking top.

You could even avoid the caramel and nuts all together if you wish and enjoy the Peanut butter fudge as it is.

The nuts gave a lovely texture and crunch to the otherwise bland and creamy peanut butter fudge. The caramel topping makes it a bit difficult to get perfect edges, but does it matter

Peanut butter fudges could be a healthy idea for a wholesome snack for your kids.

Peanuts come under some of the ‘most allergic food list’ along with other food products such as cow’ milk (lactose), whole-wheat (gluten).

Check with your physician for any allergic reaction before consuming these nuts.

Please let the fudge rest in your refrigerator for a day if you can, to get perfect slices.

You could avoid the 1 tsp. of melted butter/ghee also and yet get a perfect fudge.

These Peanut Butter Nutty Fudge are extremely easy and quick to make and can save a lot of time during festive hours.

You could even roll each fudge into small balls and serve them as an individual servings in cute cup cake liners.
