  •     Vegetable oil spray
  • 1/4 c. light margarine softened
  • 3/4 c. firmly packed light brown sugar
  • 1/2 c. sugar
  • 1/3 c. reduced-fat peanut butter
  •     Egg substitute equivalent to 1 egg or possibly 1 egg
  • 1/4 c. unsweetened applesauce
  • 1/2 tsp baking soda
  • 2 1/2 c. all-purpose flour
  • 1 tsp vanilla extract

  1. Serves 30; 2 cookies per serving
  2. Preheat oven to 350 degrees F. Spray baking sheets with vegetable oil spray. In a large mixing bowl, cream margarine. Gradually add in sugars, beating after each addition, till creamy. Add in peanut butter, egg substitute, applesauce, and baking soda; beat well. Gradually add in flour to batter, beating after each addition. Stir in vanilla.
  3. Roll dough into 60 balls about the size of a pecan or possibly the bowl of a measuring tsp.. Put on baking sheets. Flatten balls slightly with back of wet fork. Bake for 12 to 15 min, or possibly till light brown.
