Рецепт PEANUT BUTTER, BANANA AND BACON PANCAKES

We call these peanut butter, banana and bacon pancakes or Elvis pancakes because they have all his favorite ingredients. Most children love peanut butter and bananas and will love having these for breakfast. What could be better than peanut butter and bananas together but peanut butter, bananas and bacon! Just add some warm maple syrup for a real treat.
4 slices bacon, cooked
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons white granulated sugar
2 medium bananas, peeled and mashed
1 egg
2 tablespoons bacon drippings or can use cooking oil
1 teaspoon vanilla extract
1 cup buttermilk (could use regular milk)
1/4 cup creamy peanut butter
Fry bacon, drain, crumble and set aside saving 2 tablespoons drippings. In a mixing bowl whisk together flour, baking powder, baking soda, salt and sugar. Add bananas, egg, bacon drippings, vanilla extract, buttermilk, crumbled bacon and mix with a spoon. Stir in peanut butter. I use 1/4 cup batter for each pancake and add a little butter to the skillet or grill when frying the pancakes. Makes 10 to 12 pancakes depending on size you make them. Enjoy!
Note: You can use about any kind of syrup with these pancakes. Blueberry syrup is good. We like maple syrup and sometimes add a little cinnamon. These peanut butter, banana, bacon pancakes will keep in the fridge for a couple days and can be reheated in the microwave or oven. I have not tried freezing them but see no reason why you couldn’t.
