%20on%20upside-down%20cakes.%20Until%20now,%20I've%20only%20been%20familiar%20with%20the%20legendary%20Pineapple%20Upside-Down%20Cake%20that%20probably%20adorned%20every%20dinning%20room%20table%20at%20some%20point%20in%20the%2070's,%20with%20the%20cute%20little%20maraschino%20cherries%20in%20the%20center%20of%20each%20pineapple%20rings%20(that%20is%20if%20us%20the%20kids%20didn't%20pluck%20them%20out%20before%20being%20presented).%20I%20had%20no%20idea%20or%20even%20stretched%20my%20culinary%20imagination%20in%20the%20direction%20of%20using%20other%20fruits%20in%20place%20of%20pineapple.%20Well,%20thats%20exactly%20what%20a%20writer%20for%20the%20Times%20did....(man...I%20wish%20I%20had%20thought%20of%20this.)%3C/p%3E%3Cp%3E***Breaking%20News***%3C/p%3E%3Cp%3EI'm%20only%20sharing%20this%20with%20you%20because%20I'm%20pretty%20sure%20most%20of%20you...if%20not%20all%20of%20you%20can%20relate...%3C/p%3E%3Cp%3ETimer's%20only%20work%20when%20you%20turn%20them%20on.%20NOT%20when%20you%20set%20them%20for%2020%20minutes%20only%20to%20turn%20them%20off%20after%20said%2020%20minutes%20and%20then%20decide%20that%20the%20food%20in%20the%20oven%20isn't%20quite%20ready%20and%20needs%20another%20few%20minutes%20but%20you%20fail%20to%20turn%20the%20timer%20back%20on.%20I%20mean...why%20bother,%20right?%20It's%20only%20a%20few%20minutes.%20Ya,%20right....25%20minutes%20later%20you%20smell%20something%20that%20almost%20smells%20good...but%20you%20can't%20figure%20out%20why%20because%20dinner%20has%20already%20been%20cooked%20and%20served.%20Then%20the%20light%20goes%20on%20and%20you%20remember...%3C/p%3E%3Cp%3EOMG!!!%20I%20have%20BREAD%20IN%20THE%20OVEN!%3C/p%3E%3Cp%3EAnd%20now%20my%20little%20white%20loaf%20of%20artisan%20bread%20looks%20suspiciously%20like%20pumpernickel.%3C/p%3E%3Cp%3EAnd%20is%20really%20super%20crunchy%20on%20the%20outside.%3C/p%3E%3Cp%3Esigh%3C/p%3E%3Cp%3EDessert....lets%20get%20back%20to%20this%20lovely%20dessert.%20And%20quick.%20Because%20I%20think%20technically,%20peach%20season%20is%20over%20but%20there%20seems%20to%20be%20an%20abundance%20of%20them%20in%20the%20markets%20still...and%20at%20good%20prices%20too.%3C/p%3E%3Cp%3EPeach%20Upside-Down%20Rum%20Cake%3C/p%3E%3Cp%3ETo%20begin%20with,%20lets%20make%20it%20easy%20to%20peel%20them%20peaches%20by%20blanching%20'em%20first.%20Get%20out%20a%20big%20pot%20of%20water%20and%20heat%20it%20to%20a%20boil%20on%20the%20stove.%20While%20you're%20waiting%20for%20that,%20get%20a%20big%20bowl%20out%20and%20fill%20it%20with%20water%20and%20ice%20cubes.%20Once%20the%20water%20boils,%20put%20the%20peaches%20in%20the%20boiling%20water%20for%2040%20-%2060%20seconds,%20depending%20on%20how%20ripe%20they%20are%20(the%20less%20ripe,%20the%20longer%20the%20boil).%20Remove%20the%20peaches%20and%20immediately%20put%20them%20in%20the%20ice%20water%20to%20stop%20the%20heat%20from%20cooking%20them%20further.%20This%20is%20called%20blanching.%3C/p%3E%3Cp%3EDrain%20and%20dry%20the%20peaches.%20Make%20a%20criss-cross%20cut%20on%20the%20bottom%20of%20the%20peach%20and%20peel%20the%20skin%20off%20with%20your%20fingers%20or%20a%20pairing%20knife....the%20skin%20at%20this%20point%20should%20peel%20away%20nice%20and%20easy.%3C/p%3E%3Cp%3ECut%20the%20peaches%20into%201/2%22%20slices%20and%20place%20them%20in%20a%20medium%20sized%20bowl.%20Drizzle%20with%20the%20lemon%20juice%20and%20set%20aside.%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20350'%20F.%3C/p%3E%3Cp%3EIn%20a%20large%2010%22%20oven%20proof%20skillet%20(cast%20iron%20is%20recommended)%20melt%203%20tablespoons%20of%20butter%20over%20medium%20heat.%20Add%20the%20brown%20sugar%20and%20stir%20until%20smooth%20then%20stir%20in%20the%20honey.%3C/p%3E%3Cp%3ELower%20the%20heat%20and%20add%20the%20peaches.%20Stir%20until%20the%20peaches%20are%20a%20little%20soft%20and%20glossy.%20This%20should%20take%20about%202%20minutes.%20Remove%20from%20heat.%3C/p%3E%3Cp%3ESpread%20the%20peaches%20around%20so%20that%20you%20have%20an%20even%20layer%20up%20to%20the%20sides%20of%20the%20pan.%3C/p%3E%3Cp%3EIn%20a%20medium%20sized%20bowl%20sift%20together%20your%20flour,%20baking%20powder%20and%20salt.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20using%20an%20electric%20mixer,%20cream%20together%20the%20remaining%206%20tablespoons%20of%20butter%20and%20the%20white%20sugar%20until%20fluffy.%20Add%20the%20eggs%20one%20at%20time,%20mixing%20in%20between.%20Then%20add%20the%20honey%20and%20beat%20until%20well%20combined.%3C/p%3E%3Cp%3EWorking%20in%20batches,%20alternately%20add%20the%20flour%20mixture%20and%20the%20rum%20to%20the%20butter%20mixture,%20starting%20with%20the%20flour%20mixture,%20stirring%20in%20between%20until%20just%20combined.%20Continue%20back%20and%20forth%20between%20the%20flour%20mixture%20and%20the%20rum%20until%20all%20of%20the%20ingredients%20are%20incorporated.%3C/p%3E%3Cp%3ECarefully%20spoon%20the%20batter%20onto%20the%20peaches%20in%20the%20skillet.%20Gently%20smooth%20it%20out%20as%20close%20to%20the%20sides%20of%20the%20pan%20as%20you%20can.%3C/p%3E%3Cp%3ENo%20need%20to%20get%20too%20OCD%20on%20this....it%20will%20rise%20and%20spread%20and%20all%20will%20be%20well%20in%20the%20end.%3C/p%3E%3Cp%3EBake%20in%20the%20350'F%20preheated%20oven%20for%2045%20minutes%20or%20until%20a%20knife%20inserted%20in%20the%20center%20comes%20out%20nice%20and%20clean.%3C/p%3E%3Cp%3EAllow%20to%20cool%20in%20the%20skillet%20for%20about%2010%20minutes.%20Then....place%20a%20large%20plate,%20upside%20down%20over%20the%20skillet%20and%20veeeeeeeeeeeeeerrrrry%20carefully%20flip%20the%20pan%20over.%3C/p%3E%3Cp%3EServe%20at%20room%20temperature%3C/p%3E%3Cp%3EThis%20was%20so%20fun%20to%20make%20and%20easy,%20aside%20from%20the%20messy%20peeling%20and%20slicing%20of%20the%20peaches.%20I%20don't%20think%20canned%20peaches%20would%20work%20as%20nicely%20as%20they%20might%20get%20a%20little%20on%20the%20mushy%20side.%20If%20you're%20not%20a%20rum%20fan,%20(and%20there%20is%20a%20nice%20strong%20rum%20flavor%20in%20the%20cake)%20then%20replace%20it%20with%20milk%20or%20even%20buttermilk.%20The%20cake%20isn't%20overly%20sweet%20and%20tastes%20incredible%20with%20a%20big%20ole%20scoop%20of%20vanilla%20ice%20cream.%3C/p%3E){kind=link}
