Peach Streusel Muffins were a MUST when we came home with this whole box of peaches. I mean, fresh peaches are yummy, but I decided these would be great for our church 4th of July potluck. I added them to the serving tray with some fresh peaches, so they even looked pretty! I love just about anything with streusel on the top, and these were no exception. They are BEST if you eat them fresh out of the oven, so you may want to consider that when you make them. Enjoy!

Peach Streusel Muffins

Ingredients:

Directions:

1. Beat the softened butter, sugar, and egg until creamy and well incorporated.

2. In a small bowl, stir together the flour, baking powder, and salt. Add the flour mixture, alternately with the milk until everything is mixed well.

3. Gently stir in the peaches and vanilla extract.

4. Prepare your muffin tin by lining it with paper liners. Spoon the muffin mixture into the lined muffin tin, filling them almost to the top.

5. In a small bowl, mix the sugar, flour, cinnamon, and chilled butter. It should look crumbly. Sprinkle the topping evenly over the muffins.

6. Bake at 375 for about 20-25 minutes, or until they are golden brown and a toothpick inserted in the center comes out clean.

Enjoy with a cup of coffee for breakfast!
