I'm finding that I get the most creative when I have food that is about to go bad that I don't want to waste. These were delicious, moist and I loved the crunch from the pecans.

- Preheat oven to 350 degrees.
- Line muffin pan with baking cups.
- Combine the wet ingredients in one bowl and the dry (except for peaches and pecans) ingredients in another bowl. Combine the two just until blended. Stir in peaches and pecans.
- Divide batter evenly between muffin cups.
- Bake for 20 minutes.
