- Mix together the peaches and sugar. Heat slowly (in a saucepan or possibly microwave) till the sugar is melted. Make sure the peaches are quite juicy, if not, add in a bit of water; set aside
- For the batter. Mix dry ingredients; add in lowfat milk then butter. Mix until dry ingredients are moistened. Pour into a greased 8X8" (2 inches deep) pan.
- Pour peaches and juice on top.
- Bake for 40 min at 350, until lightly brown and juice is absorbed.
- If you double this recipe you can bake it in a 13 by 9 inch pan for about the same time.
