Spicy bitter gourd stir fry as its name is a spicy version prepared using very few ingredients and can be made in just minutes. Bitter gourd, the name is enough to make kids run away and am sure there are still people who hate this vegetable, but it has lots of health benefits, like its good for intestinal health and helps get rid of nematode worms. It is so good for diabetic patients, does not cure diabetes but it helps lower the sugar level. Any how too much intake of bitter gourd and consumption on an empty stomach is not advisable, it may lead to hypoglycemia, a condition in which the blood sugar becomes too low. For this reason pregnant women should totally avoid bitter melon. Prepare and serve bitter gourd recipes once a week to relish good health and even if you love bitter gourd try to limit the intake to 3 spoons a day. Coming to the recipe its so spicy and a best alternative for deep fried pavakkai chips version, I have used lesser oil and stir fry method so its healthier and also saves your time. Goes well as sides with curd rice and sambar rice. Lets see the required ingredients and the preparation method.

INGREDIENTS

Serves 3 to 4 people

Total Preparation Time : 8 to 10 minutes

PREPARATION METHOD

Slice bitter gourd into thinner slices using a knife or slicer and drop them into a bowl of water mixed with salt for 5 minutes.

Then remove the slices from water and pat dry them. This will help remove 50% of its bitterness.

Now heat a pan/wok and add oil. After it heats up add the curry leaves and bitter gourd slices and saute until it gets cooked. Takes just few minutes to get cooked.

Then add red chilli powder and salt and saute until the raw smell of the red chilli powder leaves. Do not saute for more than 2 minutes.

Remove from flame and serve.

TIP 1: Make sure you slice the bitter-gourd into thinner slices to get a mild crispiness.

TIP 2: You can use the bigger bitter gourd for this recipe it will be easier to slice.

Spicy bitter gourd poriyal is now ready!! Serve with curd rice or sambar rice and enjoy!!
