%20hubby%20and%20then%20he%20was%20transferred%20down%20to%20NC%20about%20a%20year%20ago.%20%20She%20took%20the%20test%20last%20month%20and%20just%20had%20her%20Citizenship%20Ceremony%20on%20this%20past%20Monday.%20%20So,%20in%20order%20to%20honor%20her%20huge%20accomplishment%20one%20of%20my%20other%20co-workers%20and%20I%20threw%20a%20little%20party%20for%20her.%20%20I%20made%20some%20very%20Patriotic%20cupcakes,%20and%20my%20other%20co-worker%20brought%20the%20card/gift.%3C/p%3E%3Cp%3EHere%20there%20are....%3C/p%3E%3Cp%3EI%20used%20my%20favorite%20white%20cake%20recipe%20by%20Better%20Homes%20and%20Gardens,%20and%20the%20frosting%20I%20used%20on%20my%20Mexican%20Hot%20Chocolate%20Cupcakes%20but%20I%20will%20also%20post%20the%20recipes%20below%20to%20make%20it%20easier.%3C/p%3E%3Cp%3EBH&G%20White%20Cake%20Recipe:%3C/p%3E%3Cp%3Eingredients%3C/p%3E%3Cp%3E4%3C/p%3E%3Cp%3Eegg%20whites%3C/p%3E%3Cp%3E2%3C/p%3E%3Cp%3E1.Allow%20egg%20whites%20to%20stand%20at%20room%20temperature%20for%2030%20minutes.%20Meanwhile,%20grease%20and%20lightly%20flour%20two%209x1-1/2-inch%20or%208x1-1/2-inch%20round%20cake%20pans%20or%20grease%20one%2013x9x2-inch%20baking%20pan;%20set%20the%20pan(s)%20aside.%20In%20a%20medium%20bowl%20stir%20together%20flour,%20baking%20powder,%20baking%20soda,%20and%20salt;%20set%20aside.%3C/p%3E%3Cp%3E2.Preheat%20oven%20to%20350%20degrees%20F.%20In%20a%20large%20mixing%20bowl%20beat%20butter%20with%20an%20electric%20mixer%20on%20medium%20to%20high%20speed%20for%2030%20seconds.%20Add%20sugar%20and%20vanilla;%20beat%20until%20well%20combined.%20Add%20egg%20whites%201%20at%20a%20time,%20beating%20well%20after%20each%20addition.%20Alternately%20add%20flour%20mixture%20and%20buttermilk%20to%20butter%20mixture,%20beating%20on%20low%20speed%20after%20each%20addition%20just%20until%20combined.%20Spread%20batter%20into%20the%20prepared%20pan(s).%3C/p%3E%3Cp%3E3.Bake%20for%2020%20to%2025%20minutes%20for%209-inch%20pans,%2030%20to%2035%20minutes%20for%208-inch%20pans%20or%2013x9-inch%20pan,%20or%20until%20a%20wooden%20toothpick%20inserted%20near%20centers%20comes%20out%20clean.%20Cool%20cake%20layers%20in%20pans%20on%20wire%20racks%20for%2010%20minutes.%20Remove%20cake%20layers%20from%20pans.%20Cool%20thoroughly%20on%20racks.%20Or,%20place%2013x9x2-inch%20cake%20in%20pan%20on%20a%20wire%20rack;%20cool%20thoroughly.%20Frost%20with%20desired%20frosting.%3C/p%3E%3Cp%3E(You%20can%20also%20use%20this%20recipe%20for%20cupcakes,%20just%20line%20muffins%20tins%20and%20bake%20at%20350%20degree%20for%20~20%20minutes.%20%20Makes%20about%2024%20cupcakes.%20~Cindy)%3C/p%3E%3Cp%3EMy%20White%20Frosting%20Recipe:%3C/p%3E%3Cp%3E1%20T.%20Water%3C/p%3E%3Cp%3E1/2%20c.%20Shortening%3C/p%3E%3Cp%3E1%20t.%20Vanilla%3C/p%3E%3Cp%3E3-4%20c.%20Powdered%20Sugar%3C/p%3E%3Cp%3E1%20T.%20Milk%3C/p%3E%3Cp%3EInstructions%20for%20Frosting--whip%20together%20water%20and%20shortening%20until%20fluffy.%20%20Add%20in%20vanilla%20and%202%20c.%20Powdered%20Sugar%20until%20combined.%20%20Add%20milk%20and%20mix%20thoroughly.%20%20Mix%20in%20more%20powdered%20sugar%20until%20it%20is%20to%20your%20desired%20consistency%20%20%20I%20usually%20use%203.5c.%20of%20powdered%20sugar%20in%20this%20recipe.%3C/p%3E%3Cp%3EOk,%20so%20I%20made%20the%20white%20cake%20batter%20according%20to%20the%20recipe%20BUT%20before%20I%20put%20it%20in%20the%20lined%20tins%20I%20split%20it%20into%20thirds%20and%20left%20one%20white,%20colored%20one%20red%20and%20one%20blue.%20%20Then%20I%20layered%20them%20into%20my%20cups.%20%20Everyone%20at%20work%20had%20a%20pleasant%20surprise%20when%20they%20bit%20into%20the%20cupcakes!%20%20It%20was%20priceless%20to%20see%20their%20expressions!%20:)%20%20You%20could%20also%20just%20swirl%20in%20red%20and%20blue%20coloring%20into%20the%20cups%20before%20you%20bake%20the%20cupcakes.%20%20(Picture%20A%20is%20layered%20and%20B%20is%20swirled%20above.)%3C/p%3E%3Cp%3EOnce%20the%20cupcakes%20were%20baked%20and%20cooled,%20I%20frosted%20them%20using%20a%20technique%20I%20first%20learned%20about%20on%20Our%20Best%20Bites%20here.%20%20They%20only%20ever%20did%20it%20with%20two%20colors%20tho%20but%20i%20just%20thought%20it%20had%20to%20work%20with%20three%20so%20I%20did%20it!%20%20:)%20%20It%20worked%20perfectly.%20%20It's%20kind%20of%20wasteful%20is%20the%20only%20prob...but%20easy%20to%20clean%20up%20which%20is%20a%20plus.%3C/p%3E%3Cp%3EAfter%20you%20make%20the%20frosting%20split%20into%20thirds%20and%20refrigerate%20for%20about%2030%20minutes.%20Then%20keep%20one%20white,%20then%20tint%20one%20red%20and%20one%20blue.%20%20I%20use%20paste%20coloring%20because%20it's%20easier%20to%20get%20a%20more%20vivid%20color,%20tastes%20better%20(to%20me%20at%20least),%20mixes%20in%20easier%20and%20doesn't%20change%20the%20consistency%20of%20the%20frosting.%20%20But%20work%20with%20whatever%20you%20prefer%20or%20have%20on%20hand!%20%20:)%20%20I%20used%20%22rose%22%20for%20the%20red%20and%20%22cornflower%22%20for%20the%20blue%20and%20I%20really%20like%20the%20way%2
