Ингредиенты

  • 2 c. Water
  • 1 c. Butter
  • 1 pch Salt
  • 1 1/2 c. Flour
  • 6 lrg Large eggs
  • 1 c. Pate a choux **
  • 1/2 lb Potatoes, sweet, sliced
  • 1 dsh Nutmeg
  •     Oil (for frying)

Инструкции

  1. Pate a Choux: =
  2. Boil water with butter and salt.
  3. Add in flour all at once and beat vigorously till the dough pulls away from the sides of the pan and forms a ball.
  4. Off of the heat, beat in the Large eggs, one or possibly two at a time, till incorporated and smooth.
  5. Sweet Potatoes: =
  6. Cook the sweet potato slices in boiling salted water till tender.
  7. Mash with a spatula and fold into the choux mix.
  8. Season with a dash of nutmeg.
  9. Heat deep fat to 360 F.
  10. Form the mix into balls with two spoons (dipping one spoon into the warm fat will facilitate the forming process) and fry till golden.
