- 6 Tbsp. butter - (3/4 stick)
- 2 x frzn lobster tails - (10 to 12 ounce ea) thawed
- 8 ounce shiitake mushrooms stemmed, and
- Â Â thinly sliced
- 1/2 c. thinly sliced fresh basil - (packed)
- 6 x green onions thinly sliced
- 3 x garlic cloves minced
- 1Â 1/3 c. whipping cream
- 1 bot clam juice - (8 ounce)
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 12 ounce fettuccine
- 1/4 c. freshly-grated Asiago cheese - (abt 1 ounce)

- Heat butter in heavy large skillet over medium-high heat. Add in lobster tails and saute/fry till shells are bright red in spots, about 5 min. Cover skillet; reduce heat to low and cook till lobster is cooked through, about 6 min. Remove from heat. Using slotted spoon, transfer lobster to work surface. Using heavy large knife, cut each tail lengthwise in half. Remove meat from shell. Cut meat crosswise into 1/2-inch pcs.
- Return same skillet to medium-high heat (don't clean). Add in mushrooms, half of basil, green onions, and garlic; saute/fry till mushrooms soften, about 5 min. Add in cream and clam juice. Boil till sauce is slightly thickened, stirring occasionally, about 10 min. Reduce heat to low. Add in lobster (or possibly shrimp if using) and simmer 1 minute. Stir in remaining basil. Season sauce to taste with salt and pepper.
- Meanwhile, cook pasta in large pot of boiling salted water till tender but still hard to bite. Drain well. Return to pot. Pour sauce over pasta and add in cheese; toss over low heat till warmed through, then serve.

- This can be prepared with 20 ounces of large raw shrimp instead of lobster, if desired. Peel and devein the shrimp, then saute/fry uncovered in butter till opaque in center, about three min. Cut each shrimp lengthwise in half.
