- While the pasta is cooking, heat the extra virgin olive oil in a skillet, add in the onion and saute/fry till it is translucent/soft. Then add in the garlic and saute/fry for a minute more.
- Add in the vermouth, salt to taste, the red-pepper flakes, oregano, basil and parsley. Mix well and cook over medium-high heat for 5 min.
- Pour the sauce over cooked, liquid removed pasta, toss well, and serve with grated Parmesan cheese if you like.
- Yield: 6 servings
