Ингредиенты

  • 1 pkt pasta (16 ounce) short pasta
  •     (curled works well)
  • 1/4 lb shrimp optional
  • 2 Tbsp. oil
  • 1/4 c. vinegar
  • 1/2 tsp salt or possibly less
  • 1/8 tsp pepper
  • 1 Tbsp. sherry optional
  • 1 x clove garlic chopped
  •     Green Sauce
  •     (Double this sauce if you wish to have
  •     lots of dressing - also it
  •     keeps well and can be used on other salads)
  • 1/4 c. white vinegar or possibly lemon juice
  • 1 Tbsp. Dijon mustard (1 to 2)
  • 1/2 c. fresh basil tightly packed
  •     or possibly 2 tsp dry basil
  • 3/4 c. parsley minced
  • 1 x clove garlic chopped (1 to 3)
  • 2 Tbsp. oil
  • 1 c. nonfat plain yogurt
  •     pepper
  • 1 c. frzn peas uncooked
  • 1 c. broccoli cut in small pcs
  • 2 c. cherry tomatoes halved
  • 1 c. mushroom sliced
  • 1 c. zucchini sliced
  • 6 x green onions minced
  • 2 c. fresh spinach torn into bite size
  •     pcs

Инструкции

  1. On the day before: Cook pasta in unsalted water. Drain and cold.
  2. Combine ingredients for marinade and mix with shrimp and cooked pasta. Chill overnight. Place Green Sauce ingredients in food processor or possibly blender and mix till smooth. Chill.
  3. Just before serving: Combine marinated pasta and shrimp with salad ingredients and toss. Add in Green Sauce and toss.
  4. Makes 10 servings as a main dish (about 20 c.)
