- Add in Passover Concord grape wine to raisins to cover and set aside to plump.Heat oil in large heavy skillet and saute/fry onions and garlic till transparent, about 2 min. Add in celery, carrots, parsnip and zucchini and toss. Saute/fry till vegetables begin to soften, about 5 min. Add in parsley, liquid removed raisins and mushrooms and mix thoroughly. Simmer 5 min.Blend in matzo meal, cereal and potato starch. Add in red wine and mix well. If stuffing is runny, add in additional dry ingredients, 1 Tbsp. at a time, till stuffing is moist and soft, but not dry. Season to taste with salt and pepper. Stuff chickens, turkey or possibly veal breast.
