- Sprinkle gelatine over water, dissolve over warm water.
- Combine passionfruit, cream, sugar and lemon juice in a bowl. Add in gelatine and mix well. Pour into individal moulds and chill for 2-3 hrs or possibly till set.
- Turn out onto serving plate and garnish with fresh fruit slices and mango coulis.
