When I think of a street food which is healthy too, Pav Bhaji wins hands down! Yes, with loads of veggies sitting pretty on the plates of my kids with a smile on their faces, is what gets the crown for this humble dish called Pav Bhaji. This surely is a great recipe to sneak in all those veggies into your kids menu which are abundant from their science dictionary. And I don’t forget to add pumpkin in my Pav Bhaji recipe..shh they are out to play

You can get ready to mix Pav Bhaji masala from the supermarket or make it at home and store in for later use. Since the number is large for the party, I ordered the Pav from the bakery shop 10 days in advance. And 120 Buns were sufficient for the mega crowd in my party.

Method: Dry roast all the ingredients except the mango powder, turmeric and asafetida. Cool a little and grind them into a fine powder, sift and then mix with the rest of the ingredients.

Store the Pav Bhaji masala in a clean glass bottle for later use.

Peel and slice onions and cover with a cellophane wrap. Refrigerate till the next day.

Veggies for the Pav Bhaji

(serves 70 )

3 Kg potato

1/2 kg of Carrots

1/2 kg of fresh Peas

250 gms of Pumpkin

2 capsicums

1/2 kg Onion

1 Kg Tomato

3 tbsp of Ginger garlic paste

Juice of 2 Lemons

5-6 Green chilles

1 cup of vegetable oil

Salt as desired

1 tsp. of Sugar

Butter to garnish

Coriander leaves to garnish

Method: I boiled the potatoes a day before and kept them in fridge without peeling the skin.

Peel the carrots, pumpkin and slice the onions. Wash and dice the Capsicum finely. Boil the remaining veggies (carrots, pumpkin, peas and tomatoes) for one whistle in a pressure cooker and cool them.

Peel the boiled potatoes and mash them with other veggies.

Take a large skillet and heat the oil in it, add sliced onions and the ginger garlic paste into it. Fry it for 5 minutes and add the mashed veggies in it. Fry it for a few minutes and add the above made Pav Bhaji masala, salt and the rest of the ingredients except the lemon juice and the coriander leaves in it.

Boil 1/2 liter of water and add it in the above veggie mix. Cook it further for a few minutes and take off the flames.

Add the juice of lemons and garnish with the coriander leaves. Cut the buns in half and roast them slightly using a tsp. of oil or butter.

Serve Pav Bhaji hot with the soft buns with a dollop of fresh butter on the veggie mix. I spread the veggie mix on the halved buns and served to the kids in the party.

Notes

Add or exclude and veggie of your choice.

I boil the tomatoes along with the veggies, which makes a very fine paste of it.

To make a chapatti roll with this veggie mix, avoid water in the recipe and spread the same over the chapattis and pack it for a great lunchbox for kids.
