%20and%20wanted%20something%20with%20at%20least%20a%20feel%20of%20comfort%20food.%20%20A%20big%20thank%20you%20from%20me%20to%20About.com:%20%20Southern%20Food%20for%20providing%20the%20perfect%20meal!%3C/p%3E%3Cp%3EFor%20those%20with%20little%20patience%20when%20making%20a%20roux,%20I%20can%20tell%20you%20that%20you%20can%20rush%20through%20the%20process%20and%20not%20ruin%20things.%20%20Fun%20fact%20about%20me:%20%20one%20of%20the%20first%20things%20my%20Mom%20taught%20me%20to%20make%20was%20a%20traditional%20roux,%20albeit%20with%20regular%20salted%20butter%20rather%20than%20the%20even%20more%20traditional%20version%20made%20with%20clarified%20butter.%20%20Years%20later,%20when%20I%20was%20vegan,%20I%20created%20many%20%E2%80%9Ccreamy%E2%80%9D%20textured%20dishes%20using%20a%20roux%20made%20with%20olive%20oil%20and%20non%20dairy%20%E2%80%9Cmilks%E2%80%9D%20or%20other%20liquids.%20%20I%E2%80%99ll%20have%20to%20experiment%20with%20all%20that%20again%20and%20post%20about%20it.%20%20But,%20in%20the%20meantime,%20back%20to%20this%20post!%3C/p%3E%3Cp%3EHere%20is%20how%20I%20did%20it%20%E2%80%93%20just%20a%20few%20variations%20(one%20of%20which,%20I%20just%20realized,%20I%20did%20not%20mention%20when%20I%20reviewed%20the%20original%20recipe%20on%20About.com.%20%20I%20forgot%20to%20mention%20that%20I%20added%20grated%20carrot.)%3C/p%3E%3Cp%3Epaprika,%20optional%20%E2%80%93%20acutally,%20I%20forgot%20about%20it,%20but%20I%20would%20have%20used%20it%20had%20I%20remembered%20at%20the%20end!%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3EIn%20a%20saucepan,%20melt%20butter%20over%20medium-low%20heat.%20Stir%20in%20flour,%20cooking%20until%20hot%20and%20bubbly,%20about%201%20minute.%3C/p%3E%3Cp%3EThis%20is%20NOT%20how%20it%20is%20supposed%20to%20look!%3C/p%3E%3Cp%3EGradually%20stir%20in%20chicken%20broth%20and%20milk.%20Add%20the%20salt%20and%20pepper.%20Continue%20to%20cook,%20stirring,%20until%20thickened%20and%20bubbly.%3C/p%3E%3Cp%3EStill%20looking%20scary.%3C/p%3E%3Cp%3EDe-lumping%20techniques%20that%20my%20mother%20never%20taught%20me.%3C/p%3E%3Cp%3EStir%20in%20the%20Parmesan%20cheese%20and%20continue%20to%20cook%20and%20stir%20until%20cheese%20is%20melted.%20%20Then%20add%20the%20grated%20carrot.%3C/p%3E%3Cp%3ESee,%20it%20all%20ended%20up%20nice%20and%20creamy%20with%20no%20lumps.%20:=)%3C/p%3E%3Cp%3EMeanwhile,%20cook%20the%20shells%20in%20boiling%20salted%20water%20as%20directed%20on%20package.%20Drain%20well%20and%20add%20to%20the%20sauce%20mixture,%20blending%20well.%3C/p%3E%3Cp%3EMy%20volume%20(versus%20depth)%20perception%20was%20not%20working.%20Would%20they%20fit?????%3C/p%3E%3Cp%3EThey%20fit%20-%20easily!%3C/p%3E%3Cp%3ETransfer%20to%20a%20lightly%20buttered%202-quart%20baking%20dish.%20Combine%20bread%20crumbs%20with%20melted%20butter%20and%20parsley%20flakes;%20sprinkle%20over%20the%20casserole.%3C/p%3E%3Cp%3Eready%20for%20the%20oven.%20I%20forgot%20to%20take%20a%20pic%20after%20it%20was%20done.%3C/p%3E%3Cp%3EBake%20at%20325%C2%B0%20for%2025%20to%2035%20minutes,%20or%20until%20hot%20and%20bubbly.%20Sprinkle%20with%20paprika%20before%20serving,%20if%20desired.%3C/p%3E%3Cp%3EServes%204%20to%206.%3C/p%3E%3Cp%3EThis%20was%20really%20good.%20Nice%20flavor%20and%20texture%20%E2%80%93%20not%20as%20gooey,%20perhaps,%20as%20some%20may%20prefer,%20but%20it%20was%20creamy%20enough%20for%20me,%20and%20Steve%20liked%20it%20a%20lot,%20too.%3C/p%3E%3Cp%3EAnd,%20I%20can%E2%80%99t%20say%20that%20I%20ever%20made%20a%20recipe%20that%20called,%20specifically,%20for%20%E2%80%9Csoft%E2%80%9D%20%20bread%20crumbs,%20or,%20if%20I%20did,%20I%20just%20used%20regular%20dry%20ones%E2%80%A6So,%20how%20to%20make?%20%20I%20had%20some%20whole%20wheat%20bread%20in%20the%20fridge,%20so%20I%20tore%20it%20up%20and%20put%20it%20in%20the%20toaster%20oven%20at%20250%20degrees%20for%20a%2010%20or%20so%20minutes,%20then%20crumbled%20it%20up%20more%20by%20hand%20and%20let%20it%20sit%20a%20bit%20longer.%3C/p%3E%3Cp%3EStill%20too%20squishy.%3C/p%3E%3Cp%3EThere,%20good%20enough!%20A%20bit%20of%20crunch%20but%20still%20a%20bit%20soft.%3C/p%3E%3Cp%3EAnd,%20here%20is%20a%20good%20tip:%20%20Melt%20the%20butter%20in%20the%20microwave%20in%20a%20container%20big%20enough%20for%20the%20breadcrumbs,%20then%20add%20the%20breadcrumbs%20and%20seasonings%20to%20the%20butter.%20%20If%20you%20don%E2%80%99t%20use%20a%20microwave,%20melt%20the%20butter%20stove%20top%20in%20a%20pan%20big%20enough%20for%20the%20breadcrumbs.%3C/p%3E%3Cp%3ENuke%20the%20butter%20for%2020%20seconds%20or%20so%20-%20keep%20an%20eye%20on%20it!%20Then%20add%20crumbs.%3C/p%3E%3Cp%3ETo%20end%20with%20a%20more%20attractive%20picture,%20here%20is%20the%20chopped%20fresh%20parsley%20that%20I%20used.%3C/p%3E%3Cp%3EParsley,%20parsley!%3C/p%3E){kind=link}
