Parmesan Chicken with Caesar Roasted Romaine

This is a simple, healthy chicken dish that you can put together during a busy week. The kids really enjoyed the meal and the chicken was very moist and flavorful.

Ингредиенты

  • 4 7 oz, skinless, boneless chicken breasts - Kosher salt, freshly ground pepper
  • 1/2 cup grated Parmesan
  • 1/2 cup panko (Japanese bread crumbs)
  • 3 Tbsp. extra virgin olive oil
  • 2 Tbsp. chopped flat leaf parsley
  • 2 garlic cloves, chopped, divided
  • 2 large hearts of romaine, halved lengthwise
  • 4 anchovy fillets packed in oil, drained, and chopped
  • 1 lemon, cut into 8 wedges

  1. Preheat oven to 450 degrees
  2. Line a large rimmed baking sheet with foil
  3. Season chicken with salt and pepper; place on prepared sheet
  4. Combine cheese, panko, 2 Tbsp, oil, parsley, and 1 garlic clove in a medium bowl
  5. Season with salt and pepper
  6. Pat panko mixture onto chicken breasts
  7. Roast chicken until crumbs begin to turn golden, about 10 mins.
  8. Drizzle romain with 1 Tbsp, oil, and sprinkle with remaining 1 chopped garlic clove
  9. Season with salt and pepper
  10. Remove sheet from oven
  11. Place romaine around chicken
  12. Roast until chicken is cooked through and lettuce is browned at edges - about 5 minutes
  13. Divide among plates
  14. Top lettuce with anchovies, garnish with lemon wedges for squeezing over
