%3C/p%3E%3Cp%3EDavid%20Ludwig,%20Owner%20and%20OperatorAdmittedly,%20I%20am%20a%20pizza%3C/p%3E%3Cp%3Esnob;%20born%20and%20raised%20in%20Brooklyn,%20NY,%20in%20an%20Italian%20neighborhood,%20I%20know%20great%3C/p%3E%3Cp%3Epizza%E2%80%A6not%20good,%20great.%20%20I%20enjoy%20Chicago%3C/p%3E%3Cp%3Estyle%20every%20now%20and%20then,%20but%20New%20York%20pizza%20is%20the%20ultimate%20for%20real%20pizza%3C/p%3E%3Cp%3Elovers.%20%20Imagine%20the%20culture%20shock%20I%20went%3C/p%3E%3Cp%3Ethrough,%20moving%20to%20Utah,%20and%20finding%20out;%20well,%20what%20is%20this%20stuff%20they%E2%80%99re%3C/p%3E%3Cp%3Ecalling%20pizza?%20%20Now,%20I%20understand%20if%20you%3C/p%3E%3Cp%3Ewere%20raised%20on%20this%20type,%20had%20never%20been%20out%20of%20the%20state,%20or%20if%20you%20had,%20never%3C/p%3E%3Cp%3Etried%20pizza%20elsewhere;%20then%20you%20wouldn%E2%80%99t%20know%20different,%20right?%20%20I%20did%20warn%20you%20that%20I%20am%20a%20pizza%20snob.%3C/p%3E%3Cp%3EMaking%20it%20at%20home%20was%20my%3C/p%3E%3Cp%3Eonly%20choice,%20until%20now;%20a%20food%20wagon%20showed%20up%20in%20Blanding,%20November%202015,%3C/p%3E%3Cp%3Eserving%20fresh%20made%20pizza%20from%20a%20wood%20burning%20oven.%20%20%20Papa%3C/p%3E%3Cp%3EDave%E2%80%99s%20Pizza%20Wagon%20is%20owned%20and%20operated%20by%20David%20Ludwig;%20teacher%20of%3C/p%3E%3Cp%3Epre-engineering%20and%20digital%20media%20at%20San%20Juan%20High%20School.%20%20I%20asked%20Dave,%20%E2%80%9CWhy%20the%20wood%20burning%20oven?%E2%80%9D,%3C/p%3E%3Cp%3Eand%20his%20answer%20was%20plain%20and%20simple,%20%E2%80%9CI%20saw%20it%20and%20wanted%20one.%E2%80%9D%20His%20story%20is%3C/p%3E%3Cp%3Eone%20of%20inspiration%20to%20any%20who%20have%20a%20dream%20and%20intend%20on%20making%20it%20happen.%20%20Here%20it%20is%20in%20his%20own%20words,%20%E2%80%9CI'd%20always%3C/p%3E%3Cp%3Ewanted%20to%20be%20involved%20in%20the%20food%20industry,%20but%20I%20was%20too%20young,%20poor%20or%20scared%3C/p%3E%3Cp%3Eto%20try%20anything.%20%20I%20had%20basically%20given%3C/p%3E%3Cp%3Eup%20on%20any%20restaurant%20dreams%20until%20the%20Food%20Trucker%20movement%20caught%20my%20attention.%3C/p%3E%3Cp%3EThe%20idea%20of%20a%20bare-bones,%20minimalistic%20food%20service%20on%20wheels%20was%20too%20fun%20and%3C/p%3E%3Cp%3Ecrazy%20to%20ignore.%20I%20felt%20like%20it%20was%20something%20that%20I%20could%20handle,%20something%3C/p%3E%3Cp%3Ethat%20I%20could%20build%20myself.%E2%80%9D%3C/p%3E%3Cp%3EEach%20step%20of%20the%20process%3C/p%3E%3Cp%3Ewas%20a%20learning%20experience%20for%20Dave,%20from%20welding%20to%20masonry;%20he%20converted%20an%3C/p%3E%3Cp%3Eold%20camper%20trailer%20into%20the%20food%20wagon%20itself.%3C/p%3E%3Cp%3EHe%20consulted%20with%20local%20building%20contractors%20and%20suppliers%20about%20the%3C/p%3E%3Cp%3Econstruction%20of%20the%20oven;%20scoured%20classifieds%20for%20restaurant%20equipment,%20and%3C/p%3E%3Cp%3Eplayed%20with%20many%20a%20recipe.%20%20%20Trial%20and%3C/p%3E%3Cp%3Eerror%20were%20the%20rule%20for%20the%20pizza%20making%20%E2%80%93%20creating%20the%20dough%20and%20finding%20the%3C/p%3E%3Cp%3Ecorrect%20thickness;%20placement%20within%20the%20oven%20to%20bake%20thoroughly%20without%20burning;%3C/p%3E%3Cp%3Ewhat%20ingredients%20worked%20as%20toppings.%3C/p%3E%3Cp%3EThen%20came%20the%20choice%20of%20wood%20to%20be%20used;%20which%20burned%20to%20the%20proper%3C/p%3E%3Cp%3Etemperature%20(900%20degrees)%20and%20had%20a%20longer%20mainstay;%20which%20woods%20didn%E2%80%99t%20place%20a%3C/p%3E%3Cp%3Escent%20or%20taste%20into%20the%20dough.%20%20Dave%20was%3C/p%3E%3Cp%3Every%20proud%20to%20say%20that%20he%20purchased%20a%20brand%20new%20chain%20saw%20and%20cuts%20his%20own%3C/p%3E%3Cp%3Ewood;%20currently%20he%20is%20playing%20with%20fruit%20woods.%3C/p%3E%3Cp%3EIngredient%20wise,%20he%20buys%20local%20only%20and%20primarily%20from%20Blue%20Mountain%3C/p%3E%3Cp%3EMeats%20in%20Monticello;%20he%20knows%20he%E2%80%99s%20getting%20quality%20products%20there.%20%20He%20makes%20his%20own%20dough;%20and%20I%20can%20tell%20you,%3C/p%3E%3Cp%3Efor%20a%20fact,%20that%20David%20Ludwig%20loves%20what%20he%20does,%20and%20puts%20that%20love%20into%20his%3C/p%3E%3Cp%3Efood.%3C/p%3E%3Cp%3ESo,%20let%E2%80%99s%20get%20to%20this%3C/p%3E%3Cp%3Epizza%20made%20with%20love;%20by%20the%20ordering%20window%20are%20the%20menus%20with%20descriptions%20of%3C/p%3E%3Cp%3Eeach%20type%20of%20pizza%20offered.%20%20Dave%20first%3C/p%3E%3Cp%3Erolls%20out%20the%20dough%20mound,%20then%20works%20it%20out%20by%20hand%20to%20the%20size%20required.%20%20Transferring%20it%20to%20the%20toppings%20station,%20oil%3C/p%3E%3Cp%3Eis%20brushed%20along%20the%20edges;%20sauce%20(red%20or%20white)%20is%20spread%20out,%20then%20the%20cheese%3C/p%3E%3Cp%3Eand%20other%20ingredients%20as%20needed.%20%20The%3C/p%3E%3Cp%3Epizza%20is%20then%20placed%20into%20the%20900%20degree,%20wood%20burning%20oven;%20moved%20from%20place%3C/p%3E%3Cp%3Eto%20place,%20during%20the%2010%20to%2015%20minute%20cooking%20time,%20to%20make%20sure%20the%20crust%20is%3C/p%
