.%20I%20figured%20this%20is%20the%20perfect%20time%20to%20give%20it%20a%20try%20though%20when%20it%20was%20just%20the%20two%20of%20us.%20%20Sometimes%20you%20just%20have%20to%20go%20for%20it,%20and%20I%20have%20a%20decent%20record%20when%20it%20comes%20to%20pan-seared%20meat.%20%20I%20almost%20didn't%20take%20pictures%20thinking%20there%20is%20no%20way%20this%20is%20going%20to%20be%20blog%20worthy%20on%20my%20first%20try.%20%20Then%20I%20thought,%20%22if%20this%20turns%20out%20great%20and%20I%20don't%20have%20pictures%20I'll%20be%20kicking%20myself.%22%20As%20you%20can%20see,%20I'm%20blogging%20about%20this%20whole%20dinner.%20I%20want%20to%20record%20all%20the%20steps%20for%20future%20reference.%20My%20husband%20told%20me,%20%22I%20knew%20dinner%20would%20be%20good,%20but%20it%20was%20great.%22%20That's%20the%20best%20praise%20I%20could%20get!%3C/p%3E%3Cp%3EPan-Seared%20Oven-Finished%20Salt%20and%20Pepper%20Rack%20of%20Lamb%20with%20Crispy%20Smashed%20Potatoes%20and%20Roasted%20Asparagus%3C/p%3E%3Cp%3E1.%20Wash,%20trim,%20peel%20the%20stalks%20with%20a%20potato%20peeler,%20and%20lightly%20coat%20the%20stalks%20with%20some%20olive%20oil,%20salt,%20and%20pepper.%20%20Set%20the%20spears%20aside%20to%20roast%20in%20the%20toaster%20oven%20later.%3C/p%3E%3Cp%3EFor%20the%20Crispy%20Smashed%20Potatoes%20(I%20made%20these%20just%20like%20the%20Crispy%20Garlic-Smashed%20Potatoes%20except%20I%20omitted%20the%20garlic)%3C/p%3E%3Cp%3E1.%20Place%20washed%20potatoes%20in%20the%20chicken%20broth%20over%20medium-high%20heat%20and%20bring%20to%20a%20soft%20boil.%20%20Maintain%20the%20soft%20boil%20until%20the%20potatoes%20are%20fork%20tender.%3C/p%3E%3Cp%3E2.%20Heat%20olive%20oil%20in%20a%20large%20frying%20pan%20and%20gently%20smash%20each%20potato%20with%20the%20heel%20of%20your%20hand%20or%20large%20spoon.%20Fry%20the%20potatoes%20on%20medium%20heat%20until%20crispy%20on%20both%20sides.%20%20Sprinkle%20both%20sides%20with%20salt%20and%20pepper.%20Place%20potatoes%20in%20an%20oven-safe%20dish%20in%20a%20200%20degree%20oven%20to%20keep%20them%20warm.%20I%20did%20this%20in%20two%20batches.%3C/p%3E%3Cp%3EFor%20the%20Pan-Seared%20Oven-Finished%20Salt%20and%20Pepper%20Rack%20of%20Lamb%20(I%20took%20much%20of%20the%20advice%20from%20the%20editors%20of%20%22Cook's%20Illustrated%22%20in%20their%20book%20%22The%20Best%20Meat%20Recipes%22%20page%20271)%3C/p%3E%3Cp%3E1.%20Trim%20the%20large%20layer%20of%20fat%20from%20the%20rack.%3C/p%3E%3Cp%3E2.%20Keep%20trimming%20all%20the%20fat%20possible%20including%20the%20thin%20layer%20of%20meat%20to%20expose%20another%20layer%20of%20fat.%3C/p%3E%3Cp%3E3.%20At%20one%20point%20I%20thought%20I%20was%20messing%20up%20and%20trimming%20too%20much.%20Actually,%20I%20was%20freaking%20out.%20I%20thought%20for%20sure%20I%20was%20messing%20up%20this%20$27%20dollar%20cut%20of%20meat.%20(I'm%20still%20having%20trouble%20getting%20that%20through%20my%20head).%20I%20was%20shocked%20at%20how%20much%20fat%20came%20off%20such%20a%20small%20rack%20of%20lamb.%20However,%20it%20was%20important%20to%20get%20to%20that%20silver%20membrane,%20and%20get%20rid%20of%20that%20too.%20You%20can%20see%20the%20pile%20of%20fat%20to%20the%20left%20and%20the%20thin%20strips%20of%20meat%20to%20the%20lower%20right.%20(I%20plan%20on%20keeping%20these%20thin%20layers%20of%20meat%20which%20look%20like%20gyro%20meat%20for%20a%20lamb%20sandwich).%3C/p%3E%3Cp%3E4.%20Remove%20the%20potatoes%20from%20the%20oven%20and%20set%20on%20the%20back%20burner%20that%20vents%20the%20oven%20heat.%20Preheat%20oven%20to%20425%20degrees,%20and%20preheat%20a%20couple%20tablespoons%20of%20olive%20oil%20over%20medium%20heat%20in%20an%20oven-safe%20frying%20pan.%20%20Pat%20the%20rack%20of%20lamb%20dry%20with%20paper%20towel%20because%20dry%20meat%20browns%20better.%20Sprinkle%20the%20rack%20of%20lamb%20generously%20with%20salt%20and%20pepper.%20Place%20the%20rack%20of%20lamb%20in%20the%20frying%20pan%20meat%20side%20down%20to%20sear%20and%20brown.%20%20Let%20it%20sear%20for%203%20to%204%20minutes%20on%20one%20side.%3C/p%3E%3Cp%3E5.%20%20Flip%20to%20the%20other%20side.%3C/p%3E%3Cp%3E6.%20Roll%20back%20to%20the%20meat%20side%20down%20position%20and%20place%20the%20pan%20in%20the%20oven%20for%2011%20minutes%20or%20until%20desired%20doneness.%20The%2011%20minutes%20gave%20us%20the%20perfect%20medium%20rare.%20%20There%20will%20be%20varying%20degrees%20of%20doneness%20between%2011%20and%2015%20minutes.%20%20NOTE:%20when%20I%20put%20the%20lamb%20in%20the%20oven,%20I%20put%20the%20asparagus%20in%20the%20toaster%20oven.%3C/p%3E%3Cp%3E7.%20Remove%20the%20rack%20of%20lamb%20from%20the%20oven%20and%20frying%20pan%20to%20the%20cutting%20board%20and%20let%20rest%20for%205%20minutes.%3C/p%3E%3Cp%3E8.%20The%20rack%20had%208%20chops%20so%20we%20each%20had%204%20served%20with%20some%20of%20the%20potatoes%20and%20asparagus.%20%20This%20really%20turned%20out%20better%20than%20I%20expected,%20and%20the%20ingredient%20list%20is%20surprisingly%20short.%3C/p%3E%3Cp%3ENOTE:%20by%20the%20way%20the%20lamb%20sandwich%20was%20delicious.%3C/p%3E%3Cp%3E1.%20I%20made%20tzatziki,%20and%20slathered%20it%20on%20a%20baguette%20portion.%3C/p%3E%3Cp%3E2.%20I%20fried%20the%20left%20over%20lamb%20slices%20like%20bacon.%3C/p%3E%3Cp%3E3.%20Put%20it%20all%20together.%3C/p%3E%3Cp%3E4.%20If%20I%20had%20red%20onion%20I%20would%20have%20added%20it,%20but%20it%20was%20delicious%20without%20it.%3C/p%3E){kind=link}
